Cedar Plank Grilled Stuffed Pork Chops

I have had cedar planks sitting in my cupboard for a year now. I had intended to grill up some salmon on one of them but I never got around to it. I was planning to grill pork chops tonight and I spotted the planks and thought they would probably work well with pork too.




I decided to use some things from the garden to stuff the chops.


I sauteed some garlic and zucchini in a little olive oil and butter.



I made a cut 3/4 of the way through each pork chop and layered the zucchini and garlic,



the chopped fresh Globe and Sweet Basil,



and the Parmesan, kosher salt and cracked pepper.



Then, I brushed each pork chop with olive oil and placed them on the grill to sear. It just took a couple of minutes for each side.



I placed the chops on the prepared cedar plank. (It needed to soak in water for 20 minutes.)



I grilled them on medium heat for about 20 minutes until the temperature reached 170 degrees.



They had the most delicious flavor! I will most definitely do this again. I think the next time I will put the chops in a brine overnight before grilling.



I served the pork chops with some fresh green beans and the rest of the zucchini that didn't fit in the chops. It was a very nice meal.

Like you, I have a package of cedar planks I've done nothing with. Usually it's my inability to plan so they never get soaked properly :)

You transformed pork chops into a dish fit for royalty. I would never have thought to cook them on a plank. I do like the flavor it gives the meat. Beautiful, Kim.

You're going to think this is crazy, but I've never used a cedar plank. I have some that were given to me as an xmas gift, but I'm convinced I'll catch the whole shebang on fire. You know you can totally see it happening to me, too...

How unusual! I would have never thought to stuff pork chops with zuchinni! I also have some cedar planks laying around waiting for salmon.
