Chicken Manicotti with Tomato Lemon and Basil Salsa

Yes, I did find that blasted little typo on my apron post! There should have been their! Oh well, I am the Ungourmet you know!

I was going to post Bubble Pizza by Three on Food for my Friday post but Delectable Dining beat me to it! These are two of my favorite blogs. Go and check out their wonderful Bubble Pizza recipes. You will love them! I will try and cook up a Bloggy Friend's recipe next week! :0)


Now, on to the Manicotti! I have had Manicotti pasta sitting up in my cupboard for quite a while now. I can't even remember what I was planning on doing with it originally. Today was the day for putting it to use.

Since it's summertime I didn't want to go too heavy so I didn't use a marinara sauce but instead chose to top the pasta with a tomato basil lemon salsa. It added nice texture and fresh flavor.




Here is what you'll need for the pasta:
  • Manicotti pasta
  • Chicken
  • Bacon
  • Cream Cheese
  • Mozzarella
  • Fresh basil
  • Lemon
  • Olive oil
  • Garlic
  • Kosher salt
  • Cracked pepper




For the Salsa you just need a few things:
  • Roma Tomatoes
  • Lemon
  • Fresh basil
  • Olive oil
  • Kosher salt
  • Cracked pepper





I have a confession to make. Well, actually two confessions. First of all, I have to admit that patience is not one of my virtues. I can't stand stuffing Manicotti pasta so I tear it open, put the filling in and roll it up. Can you even believe it? How Ungourmet! Secondly, I took photos of the ingredients for this dish and it included a zucchini from the garden. I really wanted to shred it and add it to the filling but I completely spaced it. So, if you want to you can add some in.

I thought this turned out to be a pretty darn good meal. My husband actually had seconds!

This filling is pretty versatile. I think it would be great on crackers or little toasts or maybe even in a WRAP!

Great recipe really.
A tip on filling pasta: you can use a pastry bag (with a large tip or no tip at all) or a freezer bag (you just fill it and cut off one angle) and filling becomes clean and easy-peasy.

I love manicotti! The easiest way to make it is actually w/ those ready to bake lasagna shells! Soften 'em up and roll your filling up inside (pre-ripped, LOL)!! These sound really delicious :D

Heh, I hate stuffing manicotti shells, too...so when I'm making it with a full sauce, I stuff them when they're still hard....and cook it on a lower temperature for a little longer...works like a charm! ;) For this recipe, I'll do your trick! :)
