Grilled Margarita Chicken

I have eaten Mexican Food since I said goodbye to Gerber. My parents grew up in Southern California and as newlyweds, would race to the market for deliveries of warm tortillas. We moved to Oregon when I was just about five years of age and we became fast friends with a family that shared our love of Mexican Food. We would get together often for a feast of Enchiladas, Rice and Beans. I'm not sure who started it and I am pretty certain it is not authentic in any way, but we always put a mix of ketchup and mayo (you know...that pink stuff) on our enchiladas. To this day I am hooked on that sauce!

Well, tonight's meal was not Enchiladas. Instead, I decided to make a little grilled Margarita Chicken.



I served the chicken with rice, beans, and veggies.



This was the marinade for the Chicken.



  • juice from 2 limes
  • juice from 1 lemon
  • 1/3 cup tequila
  • 1/4 cup olive oil
  • 1 tbsp Cholula Chili Lime Seasoning
Marinade 4 boneless chicken breasts for at least 30 minutes, and then, Grill 'em up.



I also served up some yummy veggies with our chicken. I heated 1 tbsp of olive oil in a cast iron pan and threw in some zucchini, Walla Walla Sweet onion, green bell pepper and tomato and cooked, stirring occasionally, until just tender. (I did season the veggies with a bit of the Cholula seasoning while they were cooking.)

This rice is really fun too. This time I threw in a little red and a little green salsa. First, I heated I tbsp of olive oil. Then, I threw in 2 cloves chopped garlic and let it cook for a minute or two. I tossed in 3/4 cup of white long grain rice and let it brown up a bit. I added 1 cup of water, 1/3 cup of red salsa, 1/3 cup of green salsa, 1 tsp of chili powder and 1/2 tsp kosher salt. I brought it to a boil, reduced the heat to low and let it cook for 20 minutes.



For the beans, the credit goes to the lovely Rosarita. I garnished all of this yummy goodness with some sharp cheddar, chopped cilantro and sour cream. I left off the ketchup and mayo sauce this time but I may just have to whip some up for next time!

Mmmm...looks good. I think it's bad for me to look at food at one in the morning because that chicken has me craving for a midnight snack or grilled chicken.

Oh gosh, this sounds yummers! I especially like the chicken; always looking for a new and different way to prepare it. I think citrus and chicken were just MADE for each other!

This sounds delicious! I have two questions though -- is the Cholula spice available in most grocery stores? And do you think the tequila in the marinade leaves a mild enough taste for kids to enjoy?

It all sounds perfect to me! The margarita chicken, especially. I've never tried it, but looking at your pictures and recipes, I think that I need to. Maybe I'll swipe some tequila from my mother-in-law's house next weekend. : )

You always combine such great flavours.
And don't throw the zucchini flowers anymore. There are great recipes for them, I'm sure you'd love them. You can stuff them and fry, etc.
