peachy keen muffins



I came up with this new muffin recipe today. They were so delicious that my kids and I couldn't stop at just one! I really love muffins for breakfast, almost as much as I love wraps for dinner. :0)



I would have preferred fresh peaches but these were already in my cupboard and they were not bad at all. I just love Bob's Whole Wheat Pastry flour. It's wonderful for making muffins and pastries.

Here is what I used for these peachy little muffins:
  • 1/2 packed brown sugar
  • 1/2 cup reduced fat buttermilk
  • 1/3 cup vegetable oil
  • 1 tsp vanilla
  • 1 tsp honey
  • 1 egg
  • 1 2/3 cup whole wheat pastry flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup chopped canned peaches, drained (or fresh peaches)
For the topping:
  • 1/4 cup packed brown sugar
  • 1 tbsp cold butter



Cut the cold butter into the brown sugar with a pastry cutter and set aside.



Heat oven to 375 degrees. Grease bottom of muffin cups or use liners. In a large bowl, combine 1/2 cup brown sugar, buttermilk, oil, vanilla, honey, and egg. Stir until well blended. Add the flour, baking powder, and salt. Stir just until moistened. Fold in the peaches. Divide evenly among muffin cups.

Sprinkle with topping.

Bake 16-18 minutes or until toothpick inserted comes out clean.



Yields 12 muffins

The peaches on my tree are almost ripe and I know for sure what I am doing with some of them... Of course, that assumes the good for nothing Japanese bettles quit eating them all. Grrr.

Mmm..I like the look of the crumble topping and the peach inside. I just asked my hubby if he would eat an apple crisp if I made one (can't eat by myself, right?)...He said probably not. :(
