Grilled Lemon Chicken with Cheese Tortellini and Fresh Veggies



I had a hankerin' for tortellini! As I have told you before, my husband doesn't enjoy pasta so we rarely eat it. I decided that he could put up with it for one night. My daughter was so excited to see pasta cooking! She is a pasta fan, especially if Alfredo sauce is involved.


For this dish you will need:
  • 3-4 boneless chicken breasts
  • 1 large package of Buitoni 4 cheese Tortellini
  • 1 10 oz container of Buitoni Light Alfredo Sauce
  • 1 15 oz can of Artichoke Hearts
  • 1 cup sliced asparagus
  • 1 zucchini (This is the 1st one from my garden!)
  • 3 tbsp of fresh lemon juice, divided
  • 2 tbsp olive oil (I forgot to put my olive oil in the picture, darn it!)
  • kosher salt
  • cracked pepper
  • tomatoes quartered
  • loosely chopped basil
  • grated parmesan
Make several slices in your chicken to allow the marinade to penetrate. Marinate in 2 tbsp olive oil, 1 1/2 tbsp lemon juice, 1/2 tsp kosher salt and 1/2 tsp cracked pepper for about 30 minutes. Cook on an outdoor or George Foreman Grill. Cut into slices.

Cook the pasta according to directions on package.



Slice your veggies and chop your basil. Cook asparagus and zucchini until tender crisp in a little salted water. Place the cooked pasta into a large bowl and toss with remaining lemon juice.



Add the sliced veggies, sliced chicken, and Alfredo sauce and toss.



Top with Parmesan , chopped basil, tomato wedges, and a little cracked pepper.

This really hit the spot!

Alfredo sauce is one of my favourite thins in the world! I like how you added all the protien and veggies to make what could have been a fattening meal quite healthy. :)

Hi, I made lemon and basil marinated chicken breasts yesterday, and served it with tomato and cucumber couscous. Nobody complained. So I guess it was ok. I love cheese tortellini, but I usually serve them alone, not as a side.

Very cute peas! I have an herb garden but maybe I should graduate to some veggies! This dish looks sooo good and as usual, easy to make! I havn't forgotten our "joint venture". I was thinking picking a country or a region within that country and a dish/wine from that area(along with sights and sounds). Whatdya think?
