Baked Lemon Basil Chicken



I was in the mood for a simple comfort meal and this really hit the spot.

I am so in love with my herb garden! I love that I can just run out to my backyard and snip a bit of basil for our meal. I would like to add a few more herbs like parsley, rosemary, oregano, and maybe a little chives would be fun in with the herbs too.




Here is what went into this dish:
  • 10 chicken tenders
  • 1/4 cup olive oil
  • 1/4 cup fresh chopped basil
  • 2 tbsp lemon juice
  • 1 tsp minced garlic
  • 1 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 cup Parmesan and Romano grated cheese blend
Place the everything but the cheese into a Ziploc bag and marinade for at least an hour.



Place into a baking pan and sprinkle with the cheese. Bake in a 375 degree oven for about 30 minutes until done and slightly browned.



I served the chicken with some fingerling potatoes tossed with butter and chopped basil and some steamed carrots.

This chicken had an excellent flavor and was very moist and tender.

Sounds like a simple and easy dish to prepare. I love to grow thyme, mint, and cilantro along with the ones you mentioned. Oh, and dill.

Lovely idea. I always forget to marinate meat, and cook last moment. Fresh herbs rock, I'm so sad when summer's over and have to go back to dry or frozen ones.

Nice and simple. I am in love with my herb garden too...there is nothing better than stepping outside and snipping off some fresh herbs to calm the soul and create a wonderful fragrant meal.
