Southwest Chicken Panini

First of all, before we go any further into this post, I need to get something off my chest. I need to be honest here! This is hard for me, but here goes. I truly believe that the Salad Spinner is the greatest contraption known to man! I do not know how I survived so many years without it! If I could, I would marry this spinner! That's how much I love it! (Don't tell my husband, he is really the jealous type!)


Okay, enough of all of that silliness!

I took the kids to Pump It Up today. Have any of you been there? It's this place with a bunch of huge inflatable slides and things. They had such a blast! Anyway, since we had such a busy day I was feeling a little lazy and wanted to make something easy for dinner. This is what I came up with. I wish you could see all of the goodies inside of this a little better!



Here's what I put in these Yummy Paninis:
  • 8 chicken tenders
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked pepper
  • a few dashes of Tabasco
  • 1 14.5 oz can of petite diced tomatoes with green chilies and garlic, drained
  • 8 slices of cracked wheat sourdough
  • shredded jack cheese
Pour all of your seasonings into a Ziploc bag. Add your chicken tenders and shake to coat. Place chicken on a well oiled, hot griddle. Add your Tabasco. Grill the chicken until nicely browned and cooked through.

On one slice of the bread layer your chicken, diced tomatoes and jack cheese. Place another slice of bread on top and place into a Panini press or George Foreman Grill until it gets all golden brown and melty.

Serve with a nice green salad.

Don't forget to use your Fabulous Salad Spinner. What! You don't have one? Well, maybe I had better do another give away soon!

That sounds like a great meal after all the fun had at Pump It Up! My boys love the place. They look forward to birthday parties that are held there and they do not stop moving, jumping, running, etc. the entire time.

The sandwiches look great! I wish I could get a pump it up built in my backyard since school's almost out. That'd be awesome :)

I LOVE Pump It Up! It is so fun and it wears them out. That's especially important here where the cold keeps us inside 9 months out of the year:-)

I love paninis and tend to go on panini spurts where I make them twice a week for a month. Absolute favourite is a chocolate/brie panini

I got a salad spinner years ago when we were first married, before I discovered my love for food. I thought it was a waste of space so I got rid of it, I kick myself constantly for that!

This looks incredible, I LOVE paninis! And what a fun day iwth your kids!

The paninis look really delicious! My grandsons totally love Pump It Up! We just had their birthday party there two weeks ago. (Their birthdays are 3 days apart... well, 2 years and 3 days apart.)

I love paninis! This looks beyond delicious, and I my dinner tonight sucked. (the boys like it, but it's not my favorite - healthy tacos). If I wasn't feeling lazy, too, I'd make it right now.
