This dish is light, healthy and low in fat. I know that with swimsuit season approaching we cannot just go around eating cheesecake for breakfast anymore. Of course, I am not talking about me! I would never do that! No, really!
Okay, so here is what you will need for this recipe:
- 8-10 boneless skinless chicken breast tenders
- juice from 1 lemon
- juice from 1/2 an orange
- 1 tsp reduced sodium soy sauce
- 1 tsp extra virgin olive oil
- 1 clove minced garlic
- 1 tbsp grated fresh ginger
- 1 tbsp dried parsley (You can use fresh parsley, I just forgot to buy it.)
- several turns of cracked pepper
- 1/2 tsp kosher salt
Place everything into a Ziploc bag. Shake, shake, shake! Place in the refrigerator for 2 or more hours to marinade. Remove from bag and place on the grill and cook through. I cooked on the George Forman Grill this time and it turned out great!
I served the chicken with some
Ginger and Garlic Broccoli and Jasmine rice.

This is how I made the Garlic and Ginger Broccoli:
- 2 cups broccoli florets
- 1 tsp minced garlic
- 1 tsp grated ginger
- 1/2 tsp kosher salt
- 1/4 cup water
- 2 tsp olive oil
