Lemon Ginger Chicken with Garlic and Ginger Broccoli


You will really have to look beyond these blurry photos and see the beauty of this dish! Apparently, I had my camera on the absolute worst setting when I took these! Can you hear me crying right now!

Don't you love my fancy, swirly chili sauce? Yeah, me too! When I brought this plate to my husband he said, "Oh, you didn't have to do all of this!". I was thinking, "Well, of course I did, it's for the blog photo, silly!


This dish is light, healthy and low in fat. I know that with swimsuit season approaching we cannot just go around eating cheesecake for breakfast anymore. Of course, I am not talking about me! I would never do that! No, really!

Okay, so here is what you will need for this recipe:
  • 8-10 boneless skinless chicken breast tenders
  • juice from 1 lemon
  • juice from 1/2 an orange
  • 1 tsp reduced sodium soy sauce
  • 1 tsp extra virgin olive oil
  • 1 clove minced garlic
  • 1 tbsp grated fresh ginger
  • 1 tbsp dried parsley (You can use fresh parsley, I just forgot to buy it.)
  • several turns of cracked pepper
  • 1/2 tsp kosher salt
Place everything into a Ziploc bag. Shake, shake, shake! Place in the refrigerator for 2 or more hours to marinade. Remove from bag and place on the grill and cook through. I cooked on the George Forman Grill this time and it turned out great!

I served the chicken with some
Ginger and Garlic Broccoli and Jasmine rice.


This is how I made the Garlic and Ginger Broccoli:
  • 2 cups broccoli florets
  • 1 tsp minced garlic
  • 1 tsp grated ginger
  • 1/2 tsp kosher salt
  • 1/4 cup water
  • 2 tsp olive oil
Heat the oil in a saute pan. Add your garlic and ginger. Cook for about a minute. Add the broccoli and the water. Cover and cook on medium-low until tender crisp.

I know you will just love all of the great flavors in this!

I love everything in this dish and I love using lemon in the Spring and Summer. I really don't think your pictures look blurry.

Great recipe-btw,what is the difference between kosher salt and regular salt?I've never used it.

Well, I guess I need to thank you for the low fat dish recipe. It does look delish and those are ingredients that I always have around! Chicken and Broccoli, two of my favorites!
