Ingredients for this tasty dish:
- 1 lb lean ground beef (or ground turkey)
- 1 clove garlic, minced
- 1 carrot, diced
- 1 15 oz can of diced tomatoes (Okay, I don't know if it's legal in all 50 states, but I used diced tomatoes with green chilies, garlic, and onion for extra zing! Shhhhh! Don't tell!)
- 1/2 cup frozen peas
- 2 tbsp curry
- 1 tbsp cumin
- salt and pepper to taste
Serve over potatoes, rice, or even noodles.
This is also a dish that you could easily cook in the crock-pot all day. I would just brown the beef and then toss everything in and let it do its thing!
Another reason to eat your curry! Studies suggest that eating curry may help ward off Arthritis, Alzheimer's and Cancer. :0)

Ooooohhhh, that sounds good. I love curry, but my husband never shuts up about the way it smells up the house. I'll need to save this for when he's out of town!
