Shoo Fly Pie

So, a couple of days ago my husband tells me, out of the blue, that he would like me to make Shoo Fly Pie! Well, I have never made this, never talked about making this, had no idea what it even was exactly, but being the great wife that I am, I was determined to make this pie. I jumped on my computer right away and did a little research and found that Shoo Fly Pie comes from the Pennsylvania Dutch, Amish and Mennonites. From what I've read, they loved pie! Before they had a way to keep foods cold, they would use the ingredients in this pie because they kept well.

I cheated and bought my pie shell! You can make your own fairly easily
(if you have the time).




Here is what you'll need to make this ooey, gooey, yummy pie!




Ingredients
  • 1 9-inch pastry crust
  • 1 cup all-purpose flour
  • 2/3 cup brown sugar
  • 1 1/2 tbsp cold butter
  • 1/4 tsp salt
  • 1 egg
  • 1 cup molasses
  • 3/4 cup cold water
  • 1/4 cup hot water
  • 1 tsp baking soda
In a large bowl, combine flour, brown sugar, butter and salt. Cut butter in until mix resembles large peas. Remove 1/4 cup of mixture and set aside for topping. In a small bowl, beat egg lightly. Add your molasses and cold water, blend gently to avoid bubbles. Set aside. In another small bowl, mix the hot water with the baking soda and pour into your molasses mixture, mix gently. Add this to your flour mixture and mix well. Pour into your pie shell. (Do not overfill or it will go over while cooking.) Top with reserved crumbs. Bake at 350 degrees for 40-45 minutes until top looks dry and slightly cracked and the pie seems fairly firm. Transfer to a wire rack and cool completely before cutting.

Yeah, it was sure fun to make. I don't make pies very often. It reminds me of a gooey molasses cookie! It tastes great with a little whip cream on top too! :0)
