White Chocolate Cinnamon Blondie Bites

I kid you not, these are the best cookie bars I have eaten in my entire life! Try not to eat these all in one day! Don't be scared to make these, they are so easy!

Okay, so here is what you will need:

  • 1 1/2 cups white chocolate chips
  • 1/2 cup butter (1 stick)
  • 1/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 tsp cinnamon
  • 1/2 cup tightly packed brown sugar
  • 1/2 cup tightly packed sweetened shredded coconut
  • 1/2 cup sliced almonds
Preheat your oven to 350 degrees. Coat an 11x7 baking pan with cooking spray, line bottom of the pan with parchment or foil, and coat again with cooking spray.
Next, combine white chocolate, butter, and sugar in a bowl set over a pot of simmering water. Heat until melted and smooth. Cool 5 minutes. Stir in the egg and vanilla, then the flour and cinnamon. Fold in the coconut.
Pour batter into prepared baking pan. Sprinkle almonds over surface and bake 20-25 minutes or until top is golden and toothpick inserted comes out clean. Cool for 15 minutes before removing from pan and allow to cool completely before cutting into squares. Makes approximately 24 bars.

A word of warning: It is impossible to eat just one of these!

These sound delicious! I wish I had one right now...blondies are o.k for breakfast, right?
