Corn Dog Muffins

I think this is a fun, kid friendly recipe. You can use any kind of hot dogs you like, including veggie dogs. You could also substitute ham if you wanted to . These are great with chili or mac n' cheese!

Here is what you will need:

  • 2 large eggs
  • 1 1/4 cups milk
  • 1/4 cup oil or melted butter
  • 1 1/2 cups cornmeal
  • 3/4 cups flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 2 tbsp sugar or brown sugar
  • 1 cup grated cheddar cheese
  • 4 hot dogs, chopped into pieces
Preheat oven to 400 degrees. Lightly grease muffin pan.

In a large bowl combine eggs, milk, and the oil or butter. Mix until it is well blended. Add the cornmeal, flour, baking powder, salt and sugar. Use a whisk or spoon and mix until smooth. Fold in hot dogs pieces. Fill muffin tins 2/3 full. Bake 14 to 18 minutes until golden. Makes about 18 muffins.
