Chocolate Chip Blueberry Pancakes

I know you are thinking that I have gone nuts now, but I assure you I am just fine! Here is what happened. This morning we agreed on pancakes for breakfast. I discovered that we were out of the easy mix in a box so I would have to do things the hard way. While I was whipping everything up my kids piped in that they would like chocolate chips in their pancakes. I had decided that I would go with my favorite, blueberry. Well, I don't know what got into me, but while I was admiring my lovely blueberry pancakes cooking away on the griddle something possessed me to throw a few chocolate chips on them before I turned them over. I have to say, they were a very yummy treat! Oh, and if you think about it, they are really very healthy. I mean, with the blueberries and the dark chocolate they are just chock-full of anti-oxidants! :) (See how I justify eating these?)

  • 1 cup flour
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1 tbsp brown sugar
  • 1 1/2 tsp baking powder
  • 1 tbsp oil
  • 1/2 cup plain yogurt
  • 1 cup milk
  • 1/2 cup fresh or frozen blueberries. (If you are using frozen you will want to thaw them before using. I usually do this in my microwave.)
  • 1/4 cup dark chocolate chips
Directions:

Put all of your dry ingredients into a medium sized bowl and whisk until blended. In a smaller bowl combine your yogurt, egg, milk and oil, whisk until blended. Pour into your bowl of dry ingredients and stir until smooth. Fold in the blueberries and chocolate chips. Cook on a hot griddle until until nicely browned. Enjoy with just a touch a real maple syrup or blueberries and a dollop of yogurt. Enjoy!
