Watch out! You're squashing my hashbrowns!

Recently, I spotted a couple of recipes for spaghetti squash that looked mighty tasty! Reeni posted a fabulous Spaghetti Squash with Lemon Garlic Sauce and Ricotta and Katy shared a delicious Spaghetti Squash-Coconut Pie recipe.

The last time I did my grocery shopping I spied spaghetti squash so I grabbed one and headed home to do some recipe surfing. I found an interesting recipe for Spaghetti Squash Hash Browns. Hmm. What an interesting idea!

I found this recipe at Healthy Recipes For Kids. I went ahead and followed the recipe. These were nice but lacking...something. Garlic? Herbs? Horseradish in the sour cream?

Ingredients

1 medium spaghetti squash, baked (I only used 1/2 of the squash for this recipe.)
1/3 cup whole wheat flour
1/2 cup grated parmesan
4 tbsp butter or olive oil
salt and pepper
sour cream for garnish

To bake squash simply cut in half, scoop out the seeds cover and bake at 350 degrees for about 45 minutes or until tender.

Mix squash strands with flour and cheese. Heat butter or oil in skillet. Using a 1/4 cup of mix for each "hashbrown", pat and press to form into a thick patties. Place patties into skillet and cook until nicely browned and crisp on both sides.

Salt and pepper to taste. Serve with a dollop of sour cream.

These were pretty good but I think they could be even better.

I also wanted to say a great big thank you to POM for sending me 3 varieties of their new Iced Coffee to try. There is Cafe au Lait, Vanilla, and Chocolate. All three are creamy, rich and delicious. Pick some up when you have a chance!

Those look really tasty. I recently saw a recipe for some zucchini cakes like that.

Maybe some sauteed onions would help? Or top them with romesco sauce?

These look really delish! I might try adding fresh minced thyme and parsley to the patties, and then adding sliced scallion or chives to the sour cream!

Mmm. Squash hashbrowns. I think I'd add some herbs into it. Give it a flavor.

OK, this is why I love it here - you're totally honest about the food you make, like YES it's great, or NO, it's not great, but maybe try such and such. Hey POM sent me some stuff, too!! I liked it - coffee and healthy? UMMM yeah. Anyway, I wanted to tell you about the cowboy quiche - it was GREAT!!!! Gone by the next morning. My one daughter asked if next time I could make it without eggs. Uh, no. Take note readers...COWBOY QUICHE - YES!

What a wonderful idea! I agree maybe a fresh herb of some kind would be good, but keeping it simple overall seems the way to go!

Thihs looks grand - and some sour cream or even horseradish would certainly add some zing. This is definitely one of the most creative ways I've ever seen of using spaghetti squash! I applaud you! Delicious.

Yeah, just looking at the recipe and you can tell it needs some zip...

I'd add chopped onion, garlic, cumin and jalapeno...maybe a dash of hot sauce. But that's me.

I think thyme would be good...

A chopped chipotle, maybe?

I think it's a great idea in theory...

Yummy. Is the spaghetti squash expensive there? It is really expensive in the Cincinnati area for some reason? I still want to try this recipe. I love spaghetti squash and this recipe sounds unique!

These are such an excellent idea! They look very good! I bet some garlic and sauteed onion would give them more flavor. And herbs. In the sauce would be good too. It really is quite bland. Thanks for the shout-out!

I love the idea of hashbrowns with spaghetti squash! I've got one now and will try to make them. I think may add onions in the patties and perhaps a dash of nutmeg?

They do look good! Maybe jazz them up with some red pepper flakes or I bet some sage would be good.

These look soooo good! I agree with another commenter, maybe a marinara sauce. Spagetthi squash tends to pick up the flavors of foods around it. Garlic sounds good, more cheese, all the suggestions sound so good to me right now that I want a panful of these!!
