Wait a minute! That's not chili!

I was all set to share a scrumptious lentil chili recipe with you until I took a bite of this cake and that's when all my plans went right out the window. Thank goodness I had a good grip on my cake!

I had promised my darling kids something special for dessert tonight and I found myself scrambling at the last minute to get something put together. Then I remembered my mom's Mayonaisse Cake.

I decided to tweak it a bit. I added coconut extract to the cake mix and topped it with a Nutella frosting and then sprinkled toasted coconut over the whole darn thing.

  • 2 cups flour
  • 2 tsp. baking soda
  • 3 tbsp baking cocoa
  • 1 cup sugar
  • 1 cup mayonnaise
  • 1 cup cold water
  • 1 tsp coconut extract
Place the sugar, mayo, water and coconut into a large mixing bowl. Blend on low speed for 30 seconds. Add in the other ingredients and mix on low until blended, scraping sides of bowl as needed. Pour batter into a greased and floured 13x9 baking pan and bake on 350 for 30 minutes or until toothpick comes out clean.

Cool completely before frosting.

For the frosting I used:
  • 1/2 cup Nutella
  • 1 1/2 cups of powdered sugar
  • 1 tsp coconut extract
  • 1 tsp vanilla extract
  • 1-2 tbsp of milk
Mix the Nutella, extracts and 1 tbsp of milk until smooth. Add the powdered sugar a bit at a time until creamy. Adjust milk as needed to gain desired consistency.

Top with toasted coconut

Wow, I never really thought about using mayo in a cake. That's definitely the first. I'll have to try that out. I usually think of more savory dishes when incorporating mayo. Interesting.

I'll bet it was awesome! My all time favorite recipe from my Nanny was mayo cake! You really upped the yummy ante with nutella and coconut! YUM!

I want a big, moist, delicious bite!! Mayonnaise cakes are always so moist and nobody would ever know the diff if you didn't tell them...gorgeous additions!

Too bad you didn't have this idea years ago. I would have listened! Ha! Even though I don't usually care for coconut, this does sound delicious. Maybe you can bake it for your Mama next time she comes to visit. :)

Wow. At first the idea of mayo in a cake made me gag a little. But then I scrolled down to that last photograph and suddenly mayo seemed to be what's missing in my life these days. MUST try that cake!

I really like the idea of using nutella as a frosting on cake. I have never thought of it but, can see how mayonnaise would really add some great moisture to the cake.
