The tale of Jumbo the muffin

One upon a time there lived a muffin and his name was Jumbo. Everyday Jumbo sat all alone in the bakery window anxiously waiting for someone to take him home and enjoy all that he had to offer. He didn't understand what the problem could possibly be. He was packed full of yummy oats, whole wheat flour, bananas, brown sugar, maple... What more could anyone ask for. In his mind he was perfect.

One particularly stormy autumn day Jumbo noticed a lovely woman passing by the bakery window and she was dressed in the most exquisite polka-dot rain slicker. Then it hit him. "That is exactly what's missing!" he said to himself. "I must find a beautiful jacket of my own and then surely some kind soul will swoop me up and take me home!".

But wherever shall I find such a lovely jacket?

Just then the baker grabbed up Jumbo and wrapped him in the most amazing wrapping. "This is magnificent!" Jumbo exclaimed.

The bakery doorbell sounded. Ring. Ring. It was the woman in the polka-dot raincoat! "I'll take the Jumbo muffin in the window please, the one with the polka-dot wrapper!"

Ingredients

1 1/2 cups whole wheat flour
1 cup rolled oats
1/2 cup packed brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp kosher salt
1/2 tsp cinnamon

2 large eggs
2 ripe bananas, mashed
1 cup fat free plain yogurt
1/3 cup butter, melted
1 tsp maple extract
1/2 tsp vanilla extract

1/4 cup chopped pumpkin seeds
2 tbsp rolled oats

Makes 12 regular muffins or 8 jumbo muffins

Mix together dry ingredients in a large bowl. In a smaller bowl add the bananas and wet ingredients, mix well. Add the wet ingredients to the dry ingredients. Stir just until combined. Fill muffin liners nearly full. Sprinkle with pumpkin seeds and oats. Bake in a 375 degree oven for 18-22 minutes.

They are yummy! I just took them out of the oven a few minutes ago. We have eaten a couple already. They have a nice hint of maple and are very moist.
