peanut butter and honey oatmeal muffins

I haven't baked up a batch of muffins in way too long! A warm muffin at breakfast time is so comforting and satisfying....it's like slipping on your favorite sweater. Pair this muffin up with a piping hot cup of coffee or tea and you've got yourself a nearly perfect start to your day!

This muffin is power packed with whole wheat flour, flax, oats, honey, peanut butter and a secret weapon...Cheerios!

My sister and I grew up on Cheerios. Cereal was a breakfast staple in our home (much like Jerry Seinfeld. It's no wonder I loved that show so much!). My mom was big on the low sugar cereal, so we were allowed four choices at breakfast; Wheaties (the breakfast of Champions), Rice Crispies, Corn Flakes or Cheerios. On very special occasions we were allowed to consume a fantastically sweet, artificially flavored and colored, and oh so hip cereal like Trix or Fruit Loops. We were in cereal heaven! I have to tell you though, my sister and I found a way around this whole low sugar thing...we broke out the sugar bowl and dumped a few heaping tablespoons of sugar over our bowls of healthy cereal. Yes! Then we would challenge each other to see who could cram the biggest spoonful of sugar laden goodness into our mouths. Good times!

Peanut Butter and Honey Oatmeal Muffins

Makes about 16 muffins

Print recipe

1 stick unsalted butter, softened
1/2 cup brown sugar, lightly packed
1/4 cup honey
1 egg
1 tsp vanilla extract
1/2 cup milk
1 ripe banana, mashed
2/3 cup crunchy peanut butter
1 cup whole wheat flour
1 1/2 tsp baking powder
1 tsp baking soda
1 tsp kosher salt
1 tbsp ground golden flax
1 tsp ground cinnamon
1/2 cup rolled oats
1 cup Cheerios

Line muffin pans with paper liners. Preheat oven to 350.

In a large bowl, cream together the butter and brown sugar. Stir in the honey, egg, vanilla, milk, banana and peanut butter. In a small bowl, sift the flour, baking powder, baking soda and salt. Stir in the flax and cinnamon. Add the flour mixture to the wet ingredients and stir just until combined. Fold in the oats and Cheerios.

Fill muffin cups nearly full. Bake for 16-18 minutes until toothpick inserted into center of muffin comes out clean.

You can easily add other fun ingredients to these. Dark chocolate chips, raisins, cranberries are just a few ideas. ;)

Oh great, I have peanut butter left over from my pnut butter chocchip cookies, these sound the perfect way to use the rest.

The cheerios are an interesting touch! I added Cheerios to a smoothie once, just to see if I could give it an interesting texture. My formula needs work though, haha.

Peanut butter and honey yummmm...

Coincidentally I was reading grams of sugar on cereal the yesterday. Crunch Berry cereal actually had less sugar than Raisin Bran. I felt kinda vindicated because I am a total "kid cereal" eater. :)
