I don't know how things roll over at your house but over here at Ungourmet-ville if one thing breaks it sets off some sort of chain reaction. It never happens at a convenient time financially either. We just replaced our igniter switch thingy on our gas furnace and now we need a new and mighty spendy bolt of some sort or another for our washer. Ugh! Fortunately, things always manage to work out in the end.
Since my children are incapable of wearing any item of clothing more than one day and since my husband could be the co-host of Dirty Jobs, I find myself doing laundry nearly every day. Today I did something I haven't done in more than 13 years...I hauled our soiled threads to the LAUNDROMAT. I have to admit, I was a bit nervous to step foot in a laundromat. I wondered just how much things had changed in coin-op laundry since the Nineties. Were coins still used? Was everything computer programmed and touch screen? Would I look like a total dork and have to ask for help from some woman in a house dress and rollers?
I am happy to report that despite our rapidly changing world, time at my local laundromat has apparently stood still. It looked exactly the same as I remembered, complete with those funny baskets with the long metal bars sticking five feet in the air and six month old magazines for everyone's reading enjoyment. I was in and out in less than an hour! Yay! While it wasn't a horrible experience, I will say, I prefer doing laundry in the comfort of my own home. ;)
As I was waiting for our clothes to wash my mind wandered. I daydreamed of lemon and honey and sour cream... I daydreamed of mini muffins with a citrus glaze. Mmmm. I stopped off at the market on my way home and found some fantastic Meyer Lemons at a great price. I raced home, threw my clean, wet laundry into the dryer and baked up these little cuties. So yum!
Mini Meyer Lemon Muffins with Citrus Glaze

makes about 30 mini muffins
Print recipe
1 cup all purpose flour
1 cup whole wheat flour
2 tbsp ground golden flax
1 1/2 baking powder
1 tsp baking soda
1/2 tsp salt
1 cup baker's sugar
1 egg
1 tsp vanilla
1/2 cup melted butter, cooled to room temperature
2 tbsp honey
1/2 cup light sour cream
juice from 1 Meyer lemon
1 tbsp grated Meyer lemon zest
Preheat oven to 350. Line mini muffin pan with liners.
In a medium bowl, sift together the flours, flax, baking powder, baking soda and salt. Stir in the sugar. In another medium bowl lightly whisk the egg. Add the vanilla, butter, honey, sour cream, lemon juice, grated zest.
Add the dry ingredients to the wet ingredients and stir just until combined. Fill liners 3/4 full and bake for about 14 minutes or until golden brown and toothpick inserted comes out clean. Cool for five minutes on a rack and then dip tops of muffins into citrus glaze. Allow to cool completely on rack.
Citrus Glaze
1 cup confectioners' sugar, sifted
1 tbsp honey
juice from 1 Meyer lemon
1 tsp grated Meyer lemon zest
Combine all ingredients and dip top of each warm muffin into glaze.
These are really nice. They aren't overly sweet and sort of remind me of a scone. Perfect breakfast along side coffee or tea.

I know just what you mean about it seeming like when one item fails... there goes another... at the most inconvenient times! I chuckled at your story about the laundromat. I went a couple of years ago with my son, who had a TRUCKLOAD of laundry. I was pleasantly surprised at my experience there, too! LOL!

Doing laundry at the laundromat makes us appreciate home more, where instead of dreaming of meyer lemons we could be in the kitchen making it happen while our washing machine does its magic.
Eeek about the washer. I'm not a huge fan of the laundromat but I do like that I can throw everything in all at once. It's nice having 5 washing machines for just me...haha.
Now these muffins. They would totally make me feel better after spending the whole day doing laundry.
