white chocolate peppermint fudge

I realize I'm arriving a little late to the party with my holiday fudge recipe but I was bound and determined to make a fudge recipe that actually set right. I'm pleased as punch with this one! It is creamy, dreamy and so very decadent. I was also happy to find another yummy way to use these sweet peppermint pillows. I think they add the perfect finishing touch.

White Chocolate Peppermint Fudge
by theUngourmet -adapted from the Carnation chocolate fudge recipe

1 1/2 cups granulated sugar
2/3 cup evaporated milk
2 tbsp butter or margarine
1/4 tsp salt
2 cups mini marshmallows
1 1/2 cups white chocolate chips
1/2 tsp peppermint extract
1/2 cup crushed peppermint candies

Line an 8x8 square baking pan with foil.

Combine sugar, evaporated milk, butter and salt in a medium saucepan. Bring to a full rolling boil over medium heat, stirring constantly, for 4-5 minutes. Remove from heat.

Stir in marshmallows, white chocolate chips, peppermint extract and crushed peppermint candies. Stir vigorously until marshmallows are completely melted. Pour into foil lined baking pan. Refrigerate for at least 2 hours. Remove from pan and remove foil. Cut into 1" square pieces.

I eat chocolate about three times a year... I like it, but I much prefer white chocolate. I'm so bookmarking this one! Wow! I'll remember this one for next year. Great post!

I see you mastered the fudge! Since I was a little girl I have loved white chocolate. I know that this will be one I will enjoy....once I let sugar back into my life!!

In my opinion you can eat fudge any time of the year, so you're in the clear :) This fudge sounds fabulous! I didn't make enough of this stuff during Christmas so I think I'm going to have to keep going through January!
