slow cooker mulligatawny

Are you one of those people? You know the type. They start their Christmas shopping for the following Christmas on December 26th. They pick up the perfect gifts for their immediate family, but it doesn't stop there. They buy gifts for their letter carrier, manicurist, cashier at their favorite grocery store, child's teacher, neighbors, their dog, cat and parakeet. They have the very last name crossed off of their gift giving list by the last day of summer. They breath easy, sip their eggnog lattes and delight in the magic of the season while all of the slacker last minute shoppers race around like chickens with their heads cut off with absolutely no clue what to buy or where to buy it.

I wish I was one of those people, but sadly I am more of the last minute slacker type. I haven't purchased a single gift and it's now 14 days before the big day. Ack!

This is the perfect slacker last minute shopper meal. You just throw everything into your slow cooker in the morning, turn it to low and away you go. You can power shop 'til you drop and arrive home to a warm, comforting meal. Kick off your shoes, fill your bowl, pour yourself a nice glass of wine and enjoy a little magic.

Slow Cooker Mulligatawny

5 cups chicken broth
1/2 pint of heavy cream
1 cup diced uncooked chicken
2 medium carrots, chopped
1 cup peeled diced apple
1 cup peeled diced potato
1/2 cup uncooked brown rice
1/4 cup seeded finely diced tomato
1 tbsp lemon juice
2 tsp dried minced onion
2 tsp dried parsley
2 tsp sweet curry powder
3/4 tsp dried ginger
1/4 tsp turmeric
salt and cracked pepper

Place all ingredients into a slow cooker. Cook on low for 7-8 hours or on high for 4-5 hours. Serve with biscuits or crusty bread if desired.

We wait until the last minute at our house to do Christmas shopping and by last minute I mean we are scrambling on Dec. 24th.

This looks so yummy. It's been chilly here lately and this looks like the perfect way to warm up. I bet it'll make my house smell heavenly!

Kim this is a winner. I did not know what went into it before and was curious. I don't have the slow cooker but think it would work over the stove just as well. I love soup in the winter.

And I ordered everything on Amazon on Thanksgiving evening. I'm basically done but we have a very small list here. Our family has turned Christmas into the minimalist holiday focusing on the tree and activities not gifts. (I being the leader of this movement... :)

I have yet to purchase any either...I love this soup, but I have never tried to make it in a crockpot.

I love crock pot meals!! This one sounds really good:) We always get the bulk of it done Black Friday then just finish the rest along the way:) It's crazy out there but it seems to work:)

Sounds like a good recipe. I normally tweak a small amount of pineapple chunks to my liking but I won't be changing any of these.

Kim - No, I'm not one of those people but I wish I was. I'm more of a last minute person.

This looks like a beautiful meal, one with big flavors and extremely comforting. You'd certainly never know it was quick and easy.

Best of luck with all of your shopping. I've been out and about a few times and have decided to do most of my shopping online. I've discovered that there are better deals, free shipping, no long lines, and sometimes free gift wrap. I say take advantage of it!

Hey Kim, you're too funny! I'm not either type, as I'm probably somewhere in the middle. I want to be the super responsible deal shopper too though:) Either way, this soup looks delicious. I've never had mulligatawny-maybe I should remedy that!

First off, this recipe looks and sounds SO good!

Second...I'm with you, I haven't even started shopping. I don't even like shopping. I know, I'm a freak. I will probably be shopping on the 23rd (just like last year) and wrapping on Christmas eve. Strange that I'm such a planner in every other aspect of my life but I can't seem to get it together when it comes to Christmas...or maybe that's just the way that I've programmed myself to "do" Christmas. Who knows?

This is one fabulous winter meal and I love eating food like this, thick, creamy and warming. And living far from family and friends, I only have the immediate family to buy for and as sons are away we bought no gifts at all this year. Until husband called me from work LAST WEEK and announced that we wanted to exchange gifts this year! YIPES! I have no idea what to get him!
