cranberry orange pistachio white chocolate fudge

Raise your hand if you love chocolate. Me too! Dark chocolate is my chocolate of choice but milk chocolate will do me just fine as well. I love it in brownies, cupcakes, truffles and in my Starbucks cup with a couple shots of espresso topped off with a touch of whipped cream. Yummo! Unfortunately, my husband does not share my love for chocolate. He will eat white chocolate, but I have to tell you, I'm not so sure white chocolate qualifies as chocolate. Does it?

I ran across this recipe for white chocolate fudge recently and thought it would be something my husband would really enjoy. I added a bit of grated orange zest to the recipe. I'm thinking a little Grand Marnier would be nice in here too.

I have to tell you, my fudge didn't set up quite as well as I had hoped. It's only my second attempt at fudge. I'm thinking it takes a bit of practice to become a fudge master. The flavors in this fudge are so fabulous I'm willing to practice a few more times to get it right.

cranberry orange pistachio white chocolate fudge

16 oz package of white chocolate chips
1 14oz can sweetened condensed milk (I used Trader Joe's organic sweetened condensed milk)
1 tbsp grated orange zest
2/3 cup chopped dried cranberries
1/2 cup chopped unsalted roasted pistachios

Line an 8" baking pan with parchment.

Combine the white chocolate and condensed milk and orange zest in a double boiler over simmering water. Heat until the mixture is melted and smooth, stirring. Remove from heat and stir in cranberries and pistachios, reserving about 2 tbsp of each for topping fudge. Spread evenly into baking pan. Top with remaining cranberries and pistachios, pressing them down lightly with a spatula. Allow fudge to set in refrigerator. Cut into squares.

I used to love milk chocolate only, followed by white, but now I have almost totally swiched to dark chocolate, also because it's healthier.
Your fudge, however, would make me grab a few pieces immediately

My hand is raised Kim! I love chocolate, but I'll eat white every now and again.. especially if it was something like this. I just did my first attempt at fudge too so I know what you mean about it setting.. looks like we have another excuse to try more! :)

Love white chocolate in many recipes but never tried it as fudge. This looks like the best! Exquisite combination of flavors that will make this a sure favorite! Must try this. I have so much chocolate on standby just waiting for something like this!

White chocolate isn't technically chocolate in that it doesnt contain any cocoa/cacao bean, so I've read.
But regardless, your fudge sounds AMAZING, and perfectly holiday-ish.

I may be a dark chocolate fudge-a-holic but these are too pretty not to make. I don't know if I can find the pistachios but I have everything else. Almonds or pecans, anyone?

Cranberries and pistachios always make me happy...and like your husband, I'm not a huge chocolate fan. But I do adore white chocolate! I've never tried making fudge before, so I can't offer you any great tips. But I know that practice makes perfect! Thank you for sharing such great treats with me. Pretty fudge, Kim! I actually love white chocolate (the real stuff). Dark is my preference too, but anything made with the cocoa butter must be a kind of chocolate-me thinks at least;-)

Now I DID make the peppermint biscotti that you showed a few weeks ago. ONLY - only one should never try melting white chocolate on their first ever try at melting chocolate in their life. Can you say chunk of solid white chocolate in the double boiler.
