stuffed acorn squash -moroccan style

I've been wanting to stuff an acorn squash for as long as I can remember. Every time I run across a recipe for stuffed squash I think to myself, "I really should try this!". Then the doubt sets in....I'm not at all sure my family would go for "stuff" stuffed into a squash. They may just completely hate it. Well, this time I thought, "Hey, my husband has survived my soups on more than one occasion, surely he can survive a stuffed squash...right?". So I went for it.

I am pleased as punch to report that everyone enjoyed the stuffing and the squash very much. Hurray!

I put together a blend of Moroccan-ish spices and threw together just what I had in the cupboards and fridge. This recipe is quite nice and so aromatic. It was easy to put together and it was a nice break from the ordinary.

Stuffed Acorn Squash~Moroccan Style

makes about six servings

3 acorn squash, cut in half and seeded

1 tbsp olive oil
2 cloves minced garlic
1/2 lb ground turkey
**Moroccan seasoning blend
2 cups cooked brown rice (cooked in chicken broth for flavor)
1 can garbanzo beans, drained and rinsed
2 large carrots, chopped
2/3 cup chicken broth

**Moroccan Spice Blend
2 tsp ground cumin
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cardamom
1 tsp ground curry powder
2 tsp dried parsley
1/4 tsp white pepper
1 tsp evaporated cane sugar
1 tsp kosher salt

Preheat oven to 350. Place the acorn squash into a shallow baking dish and bake for 30 minutes.

While the squash is baking, heat the olive oil over medium heat. Add the garlic and saute for about 30 seconds. Add the ground turkey. Crumble and cook though. Add the spices, beans, carrot and broth. Simmer on medium low until most of the liquid has been absorbed.

Remove squash from oven and fill evenly with stuffing. Place back into to oven for another 15 minutes. Enjoy!

Feel free to play around with ingredients and add more or less of whatever spices you like. You can also add raisins to this if you like. I personally do not care for raisins in savory dishes like this but if you do, I say you should go for it.

I like this very much! I've been on a moroccan kick ever since we ate in "Morocco" at Disney Worlds Epcot. This look amazing! And I have 2 acorn squashes here ready to make it!

Mmmm, this does sound fabulous. I am sure you've noticed in my blog that my husband is not a huge fan of squash, but maybe the other flavors in this would make it bearable for him! It looks GREAT!

Hey Kim, I can't see how they wouldn't like these stuffed acorn squashes. I mean, what's not to like (smile)? Plus, this is such a great way to use Thanksgiving leftovers...Yeah!
