easy pumpkin bars

Hope you all had a terrific Thanksgiving! My mother-in-law and sister-in-law prepared a delicious Thanksgiving feast. I contributed a couple of sides and a pumpkin pie. What a fantastic meal!

Every year I bake at least one pumpkin pie. Each and every time I put together my ingredients I end up with too much filling for one pie shell. This year I chose to make this yummy pie recipe from Weelicious. It was fantastic but once again I ended up with more filling than I needed. I decided it was definitely too good to waste so I put the rest of it into a pumpkin bar recipe. I came up with this recipe off the top of my head and I was worried that it wouldn't turn out but...it was amazing! My sister and her family stopped by for a visit shortly after the bars came out of the oven. I let my lovely nieces be my taste testers and they agreed that these were indeed scrumptious. Yay!

This is basically 1/2 of the filling recipe with my crust and other ingredients added.

Pumpkin Bars
by theUngourmet

1 cup crushed graham crackers
2 tbsp melted butter

1/4 cup chopped pecans
1/2 cup dark chocolate chips

1 cup pumpkin puree
1/4-1/3 cup evaporated milk
1 egg, beaten
3 tbsp maple syrup
1/4 lightly packed brown sugar
1 tsp pumpkin pie spice
1/4 tsp salt

Preheat oven to 350 degrees. Lightly grease an 8x8 baking dish.

In a small bowl, combine the crushed graham crackers and melted butter. Spread evenly into bottom of baking pan. Evenly spread pecans and chocolate chips over graham cracker crust.

In a medium bowl, combine the pumpkin, milk, egg, syrup, sugar, spices and salt. Pour over crust.

Bake for 30-40 minutes until pumpkin is set. Allow to cool before cutting into squares.

Kim, you never cease to amaze me with your delicious recipes. Wish I would have been there as well when they came out of the oven. You and my Great Grandson look so sweet looking lovingly into eachother's eyes! By the way, thanks for reading my Thanksgiving post.

That is a precious picture of you and your nephew. Those pumpkin bars are a great idea to use up that extra pumpkin filling.

I can't tell what looks better...the pumpkin bars or your nephew (okay, definitely your nephew. I could eat him up.) But those bars do look DELICIOUS! Great job coming up with this recipe!

Hey Kim, these pumpkin bars look delicious. And you know I love a dessert with redeeming qualities. Pumpkin pie like things qualify due to good nutrient load;)

I sorta want another baby but really don't want any diapers, late night crying, feeding, lugging or any of the acoutrements that come with a baby!

The bars would have been gone in about 10 minutes at our house...

Adorable baby!!! I tend to do the same thing as well. I make too much of one thing and end up trying to figure out what to do with the rest.

I must say pumpkin bars do sounds really tasty right about now.

I don't think you could possibly go wrong with those ingredients. I always have way too much pumpkin leftover too so I will have to keep these in mind.

These were perfectly amazing and easy to make, as the title suggests.

I didn't have pumpkin pie spice so I just devised my own ~ I think I did 1/2t powdered ginger, 1/4t crushed clove and 1/2t-3/4t cinnamon. Yum!
