I nearly forgot to post this chili recipe. This is another husband friendly soup disguised as chili. It's kind of in between a soup and a chili. It's a Choup...or maybe it's a Shili. Oh, who cares? It's darn tasty!
I've been breaking out my slow cooker quite a bit lately. It's so great to just throw everything in, flip it on low and let it go. I used those terrific steamed lentils from Trader Joe's in here but I'm sure uncooked lentils would work out fine as well. I also threw in some leftover chicken sausage. I used vegetable broth in this recipe so if you prefer a meatless meal, just leave out the sausage. It's plenty hearty and flavorful without any meat added in. Give this a try soon!
Slow Cooker White Bean and Lentil Chili

1 cup uncooked white beans, such as great northern
2 cups steamed or uncooked lentils
1/2 lb ground chicken sausage, cooked and crumbled
1 red bell pepper, seeded and diced
4 cups vegetable broth
1 tbsp chili powder
1 tsp ground cumin
2 cloves chopped garlic
salt and pepper to taste
Garnish options
Jack cheese
sour cream
salsa verde
Place all ingredients into a slow cooker. Cook on low 6-8 hours or on high for 4-5 hours. Garnish as desired.

I made great northern beans and white rice today - it must have been a white bean kind of day - this chile looks like the ticket.
Sometimes it's all about the element of disguise. At least that's what I find works best for my picky eaters (aka my father and brother). This looks awesome. Love white beans.

NOT chili... sorry. Real Chili does not have beans.

Ron- I found your comment to be quite intriguing. I have read that chili con carne is made without beans. Over the years I have seen many recipes for chili containing beans. I have eaten in many restaurants with chili on the menu and it contained beans. I see chili on store shelves with beans. I thought that chili may or may not contain beans depending on the style. It looks like I'll have to get to work on a bit of chili research. Thanks for your comment.

I agree with scrappysue. Your blog, your recipe. I personally believe that chili cannot be made w/out beans. This recipe not only sounds and looks delicious, but is so healthy! Looks like something I would love.

"Choup" or "chili" - I like it! I like chili in pretty much any form. Luckily so does my husband. With meat, or vegetarian, chili is something he'll eat any time.
