peach mimosa grilled chicken with arugula salad and a sweet giveaway

Have you ever tried Girard's Vinaigrettes and Dressings? My husband and I tried their signature Champagne Dressing several years ago and we really enjoyed it. Recently, I received a wonderful sample pack of Girard's. It contained their signature Champagne Dressing as well as three lovely new flavors: Peach Mimosa Vinaigrette, Creamy Balsamic Vinaigrette and Apple Poppyseed Dressing. Girard's actually has over 16 delicious flavors to choose from.

I was really excited to try the Peach Mimosa Vinaigrette!

I picked up some peaches from farmers market on Saturday and thought they would be perfect for this dish. It was so simple to prepare and such a lovely and light meal for a warm summer evening.

I marinated a few boneless skinless chicken breasts in a mix of Girard's Peach Mimosa Vinaigrette, chopped jalapeno pepper, sliced scallions and fresh cracked pepper. I recommend marinating your chicken for a few hours or even overnight.

The salad was simple. In a large bowl, toss together some fresh arugula, toasted almond slivers, blue cheese, Girard's Peach Mimosa Vinaigrette and fresh cracked pepper. Garnish with thinly sliced fresh peaches.

This was such a wonderful, far from ordinary, nearly extraordinary meal. We loved every bite!

Looks delightful...my fave salad is an old fashion one, my mom always made it for us. Spinach & lettuce, red onion, bacon and hard boiled eggs with a hot sweet and sour bacon dressing. The hot dressing would wilt the salad a little. I'd pick out the onions(when I was little). lol Thanks for the giveaway.

I just had a Thai Peanut Chicken Salad yesterday that really topped my list...salad greens with rice noodles, peanuts, snow peas, tofu, and chicken in a yummy soy peanut dressing!

Hey Kim, my favorite salad is a salad that is eaten in Spain and places like Algeria and Morocco. A plate is layered on the bottom with boiled potatoes and this is topped with a very vinegary salad of mixed organic greens, tomatoes, cucumber, red onions, olives, and boiled eggs. Sometimes tuna is in it too! It's so good!
Oh, and I love the sounds of your summery salad. I can see arugula and peach being very yum (smile)...

My favorite salad is probably an apple bacon walnut salad...w/ crumbled blue cheese & freshly ground black pepper!

I DO know Gerard's Champagne dressing and love it, although I can't find it at the Commissary. But a quick trip to Kroger changes that. It's been awhile since I've picked up Gerard's though and didn't realize they had added flavors. Y'know living in Georgia is perfect for something with peaches! This sounds delish and peaches are so easy to come by right now. Thanks for posting. I would have never come up with this on my own!

Let's see... I recently made a salad with fresh corn, tomatoes, avocado, red onion, and arugula. I drizzled it with some sherry vinegar or champagne vinegar (now I forget) and EVOO.

I love Girard's but have never tried the champagne. Your peach dish looks delicious! I make a salad with spinach, balsamic vinegar, olive oil, pecans and dried cherries that we really like.

Oh yum-delicious!! We have a salad dressing called La Cantina from a restaurant here. It's amazing. You just mix the vinegar base (which is how they sell it) with any kind of oil, we use olive oil. I love it with mixed greens, feta cheese, d'anjou pears, chopped walnuts and baby Roma tomatoes. This salad is fantastic with perfectly cooked steak. My mouth is officially watering.

The peach mimosa dressing sounds SO WONDERFUL and this gorgeous meal looks outstanding! Peaches are a real favorite of mine and these meal looks so pleasing.

I think one of my favorite salads is an arugula salad with sliced peaches, mozzarella and crispy prosciutto. It's a Tyler Florence recipe I tried awhile back.

I love Girards's - the favorite being the champagne (so good over skinny string beans) and the second being the feta vinaigrette - which is a mainstay in the home when I make Greek salads (a lot!).

Homegrown lettuce, preferably something tender like young black seeded simpson, with feta, homegrown tomatoes, strawberries, toasted pecans, and homemade vinaigrette! Yum!!

MMMmmmmm......sounds yummy! My favorite salad is a cheater salad. It's a salad pack from the local grocery or Costco called Parisian. It has cranberries and walnuts in it. Very tasty!

This sounds quite tasty my friend! I have never tried peaches in my salad though! I am a huge believer in Thai salads with salmon and nuts. Weird huh? But so tasty! xo

That looks delicious! One of my favorite salads ever had a really subtle raspberry vinaigrette, feta cheese, olives, sesame seeds, and dried cranberries. Just thinking about it is making my mouth water!
