chick food for father's day

I realize this looks like a whole lot of chick food for father's day but let me assure you, there was some grilling of steak going on, too!

I spied these fun skewers in Better Homes and Garden July issue. Don't you just love 'em?! The only thing I wasn't pleased with was how difficult it was to skewer the crumbly feta. I thought it would be great to add some pepperoni to the skewers with the mozzarella and basil. I used black olives but, of course, kalamata would be better. I also found these wonderful Persian cucumbers at Trader Joe's. They were delicious!

I had some wild greens that needed to be used so I whipped up this salad as well. No recipe really. Just greens, raspberries, pistachios, what should have been goat cheese but I didn't have any and a nice balsamic vinaigrette. Yum!

Just look at all of that amazing goodness! I love the pop of color in this salad.

My husband's parents brought some steaks for grilling and for dessert my daughter grilled up some pineapple to pair with vanilla ice cream. The grilled pineapple dessert was a perfect finish to a lovely meal.

Hope you all enjoyed your Father's Day as well.

sounds like you had a lovely dinner! love the raspberries in your salad. I'll have to remember that. I think the only fruits I've used in a green salad are grapes and strawberries (ya...I have some salad "growing" to go)

You guys had a seriously wonderful father's day meal! I would want those skewers as a main course...but that's just the cheese and veggie lover in me! (Plus I'm a chick. That has to account for some of it!)

I'll defintely love to have some of that refreshing berry salad...YUM.
Those fancy kebabs look absolutely wonderful. You certainly wanted to challenge yourself with that feta...but I get the feeling you'll find a better substitute next time ;o)
I would have never described these kebabs as 'chick' appealing...they're great for all ;)
Your Father must have been gleaming over his pride of his dedicated daughter.
Well done Kim ;o)

at first I read "chic" food - no matter it still looks tasty and refreshing.

Kim, everything looks great! About the feta--if you feel like splurging, pay a few extra bucks and get Greek feta...it's creamier and not nearly as crumbly as the other kind! It was one of the happier things I learned in Greece last year.

Look at those skewers... lovely! I don't like feta, so I would have just used mozzarella... or maybe some brie! Mmmm. Thinking of grilling made me hungry.
