We have quite a bit of pancake love going on at our house. We eat them at least once a week. Sometimes we get bored with plain ho-hum pancakes and dream of something with a touch of zing...something that will make our pancake lovin' hearts sing.
A coworker of mine is currently attending the Institute for Integrative Nutrition. I have been considering this program as well. As I was peeking around the website, I found some terrific recipes, including these yummy pancakes.
I had never tried putting poppy seeds into pancakes.
I have to say, these are now one of my favorite pancakes. I can't wait to make them again! The lemon and poppy seed combination tasted terrific with the fresh strawberries. The whipped cream has vanilla and a touch of honey and was the perfect finish for this yummy breakfast treat.
We also drizzled a little warm maple syrup over these. I thought they were great with or without the syrup.
Lemon poppy seed pancakes
adapted from the Institute for Integrative Nutrition
Serves 4
Print recipe
1 large egg
1 1/3 cups almond milk (or soy milk)
1 tbsp lemon zest
juice from 1/2 a lemon
1/4 cup canola oil
1 3/4 cups whole wheat pastry flour
1/4 cup almond meal
1/4 cup poppy seeds
1 tbsp baking powder
1/2 tsp salt
Mix egg, milk, zest, lemon juice and oil in a medium bowl. Mix flour, almond meal, poppy seeds, baking powder and salt in a small bowl. Combine the wet and dry ingredients until moistened. Using 1/4-1/2 measuring cup drop batter onto a lightly oiled griddle and cook until both sides are golden brown.
Serve with fresh berries and whipped cream laced with a touch of vanilla and honey.

We've been eating a lot of strawberries lately. This would be a delicious change from adding them to angelfood cake. Good job!

I've never seen poppy seeds in pancakes but it looks delicious to me! That's pancakes kicked up a notch, for sure!

Looks fantastic! I'm not a cook, but I make a whole lot of buttermilk pancakes for my kids (they are picky eaters, but love pancakes, of course!)! I am sure they won't like poppy seedds, but I sure do-I'm going to have to treat myself! :)
