Burritos are an old standby at our humble abode. If I can't think of what to fix for dinner or if we are in a time crunch to get something on the table and then into our hungry tummies, we go for burritos. Sometimes, however, we get a tad bored with the same old, same old burritos and long for something more.
These Calypso Burritos are bursting with that something more.
With the addition of zucchini, carrot, roasted corn, fire-roasted tomatoes and cilantro, they really pop with fantastic flavor and texture. They are a nice break out from the ordinary, which is almost always a good thing!
Calypso Burritos
adapted from Taste of Home more fast fixes with mixes
serves 8
Print recipe
2 small zucchini, shredded
2 medium carrots, shredded
1 tbsp canola oil
1/2 lb ground turkey, crumbled and browned (the original recipe didn't call for this)
1 can kidney beans, drained and rinsed
1 can black beans, drained and rinsed
1 1/2 cups roasted corn
3/4 cup fire-roasted diced tomatoes
2 tbsp taco seasoning
2 tsp ground cumin
1 cup shredded mozzarella cheese
1/4 chopped fresh cilantro
8 large flour tortillas, warmed
In a large skillet over medium heat, cook the zucchini and carrot in the tbsp of oil, stirring until tender. Stir in the meat, beans, corn, tomatoes, taco seasoning and cumin. Cook for 5-7 minutes, stirring occasionally.
Remove from heat. Stir in cheese and cilantro. Spoon about 2/3 cup of bean mixture onto a warm tortilla. Wrap tightly, brown on a warm griddle and cut in 1/2 if desired.
Serve with sour cream and hot sauce if desired.

Mmm. these look delicious. I would miss out the turkey though, like in the original recipe. The beans will give a satifying, meaty texture to the dish without adding anything else.
I like all the veggies in these.
I'll skip the turkey and make these for my best friend who's a vegetarian! They look amazing and I love anything that calls for roasted corn.
