Super Hero Muffins

If Spiderman, Batman, Superman, Aquaman, Plasticman and Wonder Woman got together and made muffins, this is just the way they'd do it. This muffin is a powerhouse! It's guaranteed to give you super human strength, help you see through walls, breathe underwater, fly, make webs shoot out of your hands, climb skyscrapers and stretch your body into any shape!

It's jam packed with whole grains, peanut butter, honey, flax, fruit, nuts and seeds.

While these muffins may not really give you super powers, they will get you revved up and ready for whatever your day might throw at you. This muffin and a cup of green tea (or a nice cappuccino) is the perfect combination of morning goodness!

super hero muffins

1 1/3 cups whole wheat pastry flour
1 cup quick oats
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 cup brown sugar
1 tsp cinnamon
1/4 cup ground golden flax
1/4 cup pecans
1/4 cup sunflower seeds
1 tbsp toasted sesame seeds
1/4 cup chopped dried apricots
1/4 cup raisins
1/4 cup dried cranberries
1 egg
1/2 cup canola oil
1/3 cup raw honey
1/2 cup peanut butter
1 tsp vanilla
1 mashed ripe banana

Preheat oven to 350. Lightly grease 18 muffins cups.

In a medium bowl combine the flour, oats, baking powder, baking soda, salt, brown sugar, cinnamon, flax, pecans, sunflower seeds, sesame seeds, apricots, raisins and cranberries.

In a large bowl combine the eggs, oil, honey, pb, vanilla and banana. Add the flour mixture to the egg mixture. Stir just until combined.

Evenly fill 18 muffin cups. Bake for 18-20 minutes until golden brown. Remove from pan and cool on a wire rack.

What a coincidence. I had some banana muffins this morning with my mochaccino. But yours is powerpacked! A muffin like that will keep me going for the rest of the day. And oh, I love your tabletop by the way...

Oh my, Kim, you have some real nice goodies hidden in these muffins. One would go great with my coffee this morning. I have not mentioned it, but I am so impressed that you always use whole wheat flour in your baking. That is one move I have not made yet, but you have inspired me.
