I heart mini coconut chocolate cakes

I've actually posted this recipe before but not in mini form. I found these darling cakes tins at a local thrift store. They came in a set of 8 for only a buck ninety-nine. What a Deal! As most of you know, we celebrated Earth Day on the 22nd of this month. One good way to show kindness to our precious planet is to buy used instead of new. It's amazing what fun things you can find in thrift shops if you put in just a bit of effort.

Have you ever started to whip up a chocolate cake only to find that you were fresh out of eggs?

Well...no worries! Just pull out that jar of mayo and get busy! Mayo??? Yes. Mayo.

Mayo is made up of eggs and oil and works just dandy in a pinch. My mom used to make this all the time and we just loved it. She didn't use the coconut or the Nutella frosting though. That was all me. I love to jazz things up if I can.

Here is the recipe. Adjust the time for mini cakes or cupcakes to 16-18 minutes.

Don't you just adore lilacs? They are so lovely and fragrant. They make me happy!

Lilac is the flower I adore more than any other, I could sit next to it all day just to feel that gorgeous smell.
The cakes are so cute and adorable. Never thought of using mayo in cakes.

Beautiful photos! I totally agree about mayo in cake. It gives it a special taste that you just can't get any other way. Almost like a "zing" if that makes sense? My grandmother made it all the time and it was always my birthday cake request!

That mayo tip is awesome! I never thought about the fact that mayo is basically pure eggs...interesting.

That is a great tip about the mayo. And uh..yes...that HAS happened to me before. So then I would just make a quick trip to the store. But we may not get so lucky with this move to be literally 5 minutes from a Kroger.

I was actually just in Goodwill yesterday and found 7 of the most adorable shirts...so yeah...I do love thrift store shopping. You just have to dedicate the time to it.

I don't have any mini cake tins but I think this recipe has my name all over it. Can I just double everything for full size? Adding Nutella to the grocery list right now. Can't believe I let myself run out....

Lilacs are my my fave. I miss the bushes of them that I grew up with. I used to fill vases in every room. So pretty and fragrant!
