As a participant in the foodbuzz Tastemaker program I have the opportunity to sample some outstanding products. This time it's Kellogg's All-Bran. Kellogg's makes 3 different varieties of All-Bran. There are Bran Buds, Original, and Complete Wheat flakes. All 3 are delicious and good for you. Who doesn't need more fiber in their diet? I know I can stand to eat a bit more.
I decided to use the Original All-Bran in some yummy bran muffins.
Once I got started throwing healthy, tasty stuff into these muffins I couldn't stop!
They have whole wheat, oats, All-Bran, carrots, apple, raisins, sunflower seeds, fresh ginger, pear sauce, cinnamon... The list goes on and on!
I am happy to report that these are wonderfully moist and flavorful! They are going fast here at my house.
All-Bran isn't just for breakfast either. You can also top mac and cheese, use it as a breading for pork or chicken, sprinkle over a green salad... Let your imagination run wild!
Apple Carrot Raisin Bran Muffins

Makes 12 muffins
Print recipe
1 cup whole wheat pastry flour
3/4 cup quick cooking oats
3/4 cup Kellogg's Original All-Bran
1 1/2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 cup raisins
1/3 cup roasted, unsalted sunflowers seeds
1 egg
1/4 cup canola oil
1 tsp fresh grated ginger
1 medium apple, peeled and grated
1 medium carrot, peeled and grated
1/2 pear sauce (or apple sauce)
1/2 cup raw honey
Preheat oven to 350 degrees. Spray oil muffin pan.
In a medium bowl, combine the flour, oats, bran cereal, baking powder, baking soda, salt, cinnamon, raisins and sunflower seeds. In a large bowl, combine the egg, oil, ginger, apple, carrot, pear sauce and honey. Add the flour mixture to the egg mixture and stir just until combined.
Bake for 18-20 minutes. Cool in pan for 5 minutes. Remove from pan and allow to cool on a wire rack.

This is one of the reasons this is my favorite food blog - using things in ways I wouldn't think of...like cereal into a muffin. Ooh now I'm thinking a light sprinkling on top (with something to adhere them) would make a yummy crunchy aspect.
I like that you get to try foods and tell us about it - I got home from vacation and found my Raisinets cherries waiting for me and I was right...they didn't last long enough for me to try the cookies. :)

I eat all bran cereal a lot. Good to see you can make these delicious muffins with them too (sometimes the bottom of the box has some crunched up pieces that dont make for good cereal--this is a great way to use them up).

This sounds great with all the good fruit! I have never heard of pear sauce and it sounds good too. Love those muffins!
With all that goodness inside them, I'm sure they are great. I'm really trying to eat more fiber lately, and the results are starting to show.

P.S. I've heard of people using bran in pie crusts before, but I'm not sure the exact recipe.
