Whole wheat almond chocolate chunk biscotti

I have a new best friend. She is crunchy and sweet and her name is Biscotti! If I would have known making biscotti was so simple I would have been making it at least once a week!

This recipe doesn't contain butter like my last biscotti did so it's quite a bit crunchier. I think it's good both ways.

The whole wheat pastry flour worked out really well in these. Sometime I would like to try a little almond flour and see what happens. I just love to experiment!

My mother told me today that this is her favorite kind so I sent her out a package in the mail. I'm hoping it doesn't get crushed or eaten by the postman (or woman!). ;0)

This tea cup was my grandma Lucy's. I think it's just gorgeous! Unfortunately, the saucer broke so this is one from another teacup. It would be great to locate another matching saucer.

Whole wheat chocolate chunk almond biscotti
inspired by a recipe from Joy of Baking that was adapted from David Lebovitz 'Room for Dessert' Whew!

Makes about 16 biscotti

Print

3/4 cup sliced toasted almonds
2/3 cup sugar
2 large eggs
1 tsp almond extract
1 tsp baking powder
1/4 tsp salt
1 3/4 cups whole wheat pastry flour
4 oz bittersweet chocolate chunks

Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Set aside.

In a large bowl, using an electric mixer, beat the sugar and eggs on high until thick, pale and fluffy. About 5 minutes. Beat in the almond extract. In a separate bowl, whisk together the flour, baking powder and salt. Add to the egg mixture and beat until combined. Fold in the almonds and chocolate chunks.

Divide dough in half and transfer to the baking sheet. Form each into an 8 x 2 inch log. You will want to dampen your hands as this dough is quite wet and sticky. Bake for 25 minutes or until firm to the touch. Remove from oven and allow to cool on a wire rack for about 10 minutes.

Reduce heat to 325 degrees. Transfer logs onto a cutting board and using a serrated knife cut 1/2 inch slices on the diagonal. Place biscotti cut side down on the baking sheet and bake for another 10-15 minutes, turning once until golden brown. Allow to cool on a wire rack for about an hour.

Store in an airtight container.

I LOVE biscotti! And even more, I love that these are whole wheat!

You should definitely experiment with almond flour. I bet it would give them a nice hint of nuttiness.

This is a great recipe! I love biscotti, and love that this is whole wheat and butter-free :) Would be interesting in flour experimentation as well - coconut might be another fun one to try!

I love biscottis too and used to make them on a weekly basis; I tweaked the recipe so many times i cant keep track. The latest batch I made I sed olive oil for the fat; usually I make them with no fat, just eggs. Anyway@ Yours looks real good and that teacup is lovely; perfect pair!

Love biscotti! Being 1/2 Italian, I grew up with my grandmother making this all of my life! I'm thinking I need to make this and bring it to her to see what she thinks!

I love, love biscotti! I've never tried (or even thought to) a recipe for biscotti with whole wheat. Does this mean I can have more than one now since they are "healthy"? :)

I am a huge fan of biscotti. I made a pumpkin biscotti dipped in chocolate in the fall (it's on my blog) and that got me hooked! They are easy to make and so delicious. I'll make this- it looks wonderful!

Biscotti is my favorite low guilt cookie. Good for breakfast, dessert, snacks, with ice cream or truffles..... There's hardly any reason not to make these!

Oh Kim, this is bad news bears.I'm a freak for biscotti!! I haven't even had a chance to make the other one yet, but we may be breaking out the new espresso machine tomorrow morning so what better chance to give it a shot? I'll try to first one first, though...and then go for there. I like a little chewy to my biscotti.

And y'know...it being Lent and all, I made shrimp and grits for dinner. My first experience making grits...and cheese grits at that. My butt is about to grow exponentially.
