I posted this cookies recipe over at the Apron Goddesses last Saturday. These were so scrumptious I haven't been able to get them out of my head!
I didn't want any of you to miss out so I thought I'd better post it over here as well!
These are my new favorite cookies!
The granola adds such a fun and crunchy goodness! I know you'll love 'em as much as I do!
Granola Chocolate Chunk Cookies
adapted from the Messy Apron
makes about 3 dozen

1/2 lb butter, room temperature
3/4 cup sugar
3/4 cup packed brown sugar
2 large eggs
1 tsp vanilla extract
2 cups whole wheat pastry flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ground ginger
2 1/2 cups granola (I used one with raisins, dates, and almonds.)
1 1/2 cups chocolate chips (I didn't have chunks on hand.)
Beat butter and sugars until light and fluffy. Add the eggs one at a time, beating well after each. Add the vanilla, beat until combined.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon and ginger. Add the dry ingredients to the wet ingredients. Stir to combine. Fold in the granola and chips.
Using an ice cream scoop, place a scant 1/4 cup of dough on cookie sheet, spacing each scoop 2 inches apart. Bake in a 350 oven for 10 to 12 minutes. Place on rack to cool.

Kevin and I have been making a recipe from the back of Bob's Red Mill's granola that looks a lot like this one. I love the mix of granola and chocolate!
I like the sound of the crunch mixed into these! Plus I'm a sucker for a new CCC recipe. You can never have too many.
You know, pictures of chocolate chip cookies generally make me want to eat them. But your pictures make me want to go out and bake them immediately.
We love granola, usually just snacking on it or as cereal or as a yogurt mix-in. Earth Fare sells several yummy ones by bulk and I *almost* bought more but didn't. Will definitely have to pick some up on my next trip and try this out.
This looks like a nice change from "regular" chocolate chip cookies. I am at the point, I think I have a collection of CCC. I still go with King Arthur's flour for the best.
I have to make this and see how it does. It sounds great.

Great recipe!! Will have to try this one. My hubby and I both love granola. Can justify it b/c granola is healthy right? lol

Hehehe...I will try these for hubby because he's the healthier of the 2 of us and he goes bananas for granola. But I'm a chocolate girl all the way. This is like the perfect union for us. ;)

Oh yum! These are like a cross between my grandma's Ranger cookies and my favorite oatmeal chocolate chip cookies. Excellent recipe. I can see why they are your new favorite.
