I decided to make myself some Birthday Biscotti! It's my very first time making it and I have to tell you, I am addicted now!! For some reason I thought making biscotti would be hard. I hate hard so I have avoided it. But this year is my year to try new things, stretch myself and be brave. Making biscotti is easy as pie. Actually, it's easier than pie!
I wanted to make a biscotti combination that was different and fun. I chose a combination of Meyer Lemon, Toasted Coconut and Poppy Seed. Yum!
I love the taste of lemon and coconut together!
The poppy seeds and flecks of lemon zest look so pretty I think.
I ate my biscotti with a spot of tea. I love vintage tea cups like this. This one belonged to my husband's grandmother. Aren't the roses lovely?!
This recipe made enough for several days.
Meyer Lemon Toasted Coconut Poppy Seed Biscotti

Print recipe
1/4 cup softened butter
1/2 cup sugar
1/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1 egg
1 egg white
juice from 1 meyer lemon
1 tsp vanilla
1 tbsp lemon zest
2 cups all purpose flour
1 1/2 tbsp poppy seeds
1/2 cup toasted coconut
Preheat oven to 350 degrees. Spread the coconut on a baking sheet and place into the oven to toast. This doesn't take long so be sure to watch it!
With an electric mixer, beat butter until creamy (about 30 seconds or so). Add sugar, baking soda, baking powder and salt. Stir to combine. Add the egg, egg white, lemon juice, vanilla and zest. Stir to combine. Add the flour, poppy seeds and coconut. Hand stir to combine.
Divide the dough in half and shape each into a 8 x 2 inch log. Place onto a lightly greased cookie sheet and bake for 25 minutes or until toothpick inserted comes out clean. Remove from oven and allow to cool for about 10 minutes.
Using a serrated knife cut into 1 inch diagonal slices. Place slices cut side down back onto baking sheet and bake for another 10-12 minutes, turning once, until lightly browned. Allow to cool.
Store in an airtight container.
I was so excited about how these turned out! I can't wait to see what other combination I can come up with.

Biscotti are probably the most foolproof cookie ever! They are impossible to mess up. I love this flavor combo - lemon and poppy seeds are what I dream of lately.

There's nothing better than relaxing and having biscotti and tea or coffee. This is terrific to make at home since store bought biscotti can be quite hard to bite on.

B) It's so funny that you've posted biscotti because I found a recipe on the SparkPeople app and after reading through it, have determined that I can do it (after all, sifting is not required).
