Almond and Blood Orange Upside Down Muffins

I couldn't resist picking up a few blood oranges at the store yesterday. I was just going to eat them but then I thought putting them into a muffin might be more fun and tasty. I've seen blood orange upside down cakes but never blood orange upside down muffins so.....

I still have leftover almond flour from my cookies so I stuck some of that in as well.

Just when I think I've picked a favorite muffin an even better one comes along.

The combination of orange and almond is wonderful!

These would be great warm with a scoop of vanilla bean ice cream. Yum!

Almond and Blood Orange Upside Down Muffins
by theUngourmet

makes about 18 muffins

Print recipe

3 large eggs
1/2 cup blood orange juice or regular orange juice
1 tbsp orange zest
1/3 cup milk
3/4 cup canola oil
1 1/2 tsp vanilla
2 cups whole wheat pastry flour
1/2 cup almond flour
3/4 cup packed brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

18 1/4 inch thick blood orange slices
1/3 cup sliced toasted almonds
brown sugar
1/4 cup butter

Spray oil muffin pans. Place a 1/2 tsp butter and a sprinkling of brown sugar in the bottom of each muffin cup. Place into a 375 degree oven for 3-5 minutes until melted.

In a large bowl combine the eggs, juice, zest, milk, oil and vanilla. Whisk to combine.

In a smaller bowl combine the flour, almond flour, brown sugar, baking powder, baking soda and salt. Whisk to combine.

Add the flour mixture to the egg mixture and stir just until combined.

Place a slice of orange into each muffin cup. Fill cups 1/2 full and place into a 375 degree oven for 16-18 minutes.

Carefully remove muffins from pan. Allow to cool on rack.

I lost a few of my almond slices when I took these out of the pan but I just stuck them back on and they stayed on after cooling.

You must give these a try. You'll love 'em!!

Good to know about the orange and almond flavor combo! Although I think you'd be hard put to find any fruit that doesn't go well with almonds. I really need to use blood oranges for something before they are completely out of season. These muffins looks awesome!

So, I was doing my weekly shopping at Meijer yesterday and spotted some blood oranges. But then it said something about use them in baking or juices and I thought "hmm...perhaps you aren't supposed to eat them??" So, I grabbed a few ho-hum naval oranges. But I'm adding them to my list for next week because these look fantastic! Life is too short to not eat muffins, I say! I'm so confused by pastry flour, though. Is that it's own thing?? Not regular flour? I can cook until the cows come home...baking is such a LEARNING experience for me.

Ok, the only thing I don't have is almond flour. Definitely will try your recipe. My girls love to bake. We made red velvet cupcake last weekend. They will sure love this much healthier treat.
