Cookbook Review Part 2: Daisy: Morning, Noon and Night

I enjoyed Daisy's cookbook so much that I decided to do a 2 part review. There are still so many great recipes I am dying to try!



This time I am trying Daisy's Puerto Rican Shortbread Cookies.

The recipe actually calls for Guava Jelly but I couldn't find any so I substituted Cherry Preserves.

The recipe also calls for almond flour. This is my first time working with almond flour. I have to say...I'm now hooked on the stuff!

These cookies are so flaky and yummy and not overly sweet.

They would be a perfect choice for a nice tea time (or coffee) with friends.

I sprinkled toasted sliced almonds on half of my cookies just for fun.

Puerto Rican Shortbread Cookies
recipe from Daisy: Morning, Noon and Night

2 cups all purpose flour (I used whole wheat pastry flour)
1 cup almond flour
1/3 cup sugar
pinch of salt
2 sticks cold, unsalted butter (I used salted butter)
2 extra-large eggs, well beaten (I used large eggs)
About 2/3 cup of guava (or other) jelly

Preheat oven to 350 degrees. Line baking sheet with parchment paper or use non stick baking sheets.

Stir the all purpose and almond flours, sugar and salt together in a medium bowl. Add the butter and work it into the dry ingredients with your fingertips until there is almost no trace of butter left. The dough should be loose and crumbly. Add the eggs and stir until the dough is smooth and no longer crumbly.

Using 1 level tablespoon for each, roll the dough into balls and set them about 1 1/2 inches apart on the prepared baking sheets. Press down firmly on the center of each dough ball with your thumb to flatten it out and create a deep well. Spoon about 1/2 tsp of the jelly into each well.

Bake until the cookies are very pale golden around the edges, about 25 minutes (mine only took 20 minutes). Allow to cool completely before serving. The cookies can be stored in an airtight container at room temperature for up to 3 days. Handle them gently!

Whatever you do, do not accidentally tip the hot, jelly filled cookie and dump BOILING HOT JELLY onto your fingers! OUCH! ;0)

What gorgeous cookies. Love that is uses almond flour and I think a number of preserves would be wonderful. Maybe a mixed batch? Love the header!

I just discovered almond flour too (Bob's Red Mill) and have been looking for ways to use it. These cookies look delicious.

Scrumptious cookies! I can make these right away since I have all the ingredients including (believe it or not) guava jelly that I picked up the other day in the store. I also have those Bonne Maman cherry preserves - my favorite!

Oh, these look so good! Is almond flour in a bag like regular flour? I have never seen it before. Sounds like something I would love to bake with.

First, I have to say that Bonne Maman cherry preserves is my favorite and I actually eat it on bread every single morning, so excellent choice. Second, those cookies look fanatstic and they would be so loved for breakfast in our house.

This is delight full and Joanne being ur sweetfren too, am inviting u here for her little party(its her birthday dear -i know that u know dear) which is a suprise party for her ...do leave her a wish in the sprinkles ok.....my feeds arent working so am trying my best to find all her pals to leave her a wish in the sprinkles before she gets there or even after....will ya help too to make it a little sucess....and leave her a wish too?

I requested that cookbook from the library and can't WAIT to get it. I still need to get used too semi-odd ingredients (for me anyway) like almond flour. Not sure what that is, but I'll figure it out. GREAT job girl ~ ♥

Hi Kim, these look really nice-like a good tea cookie. If you do want to try them with guava jelly, Publix sells Palmalito (don't know if Publix is in Oregon though). It is made in Florida with guava grown in the Dominican Republic. You can also order Grandma Berrie's gauva jelly online, which is made with Florida grown guava. Anyway, they are very rustic and pretty.

Is that "don't pour boiling hot jelly on your fingers" a lesson from experience? ;) They look delish and I'm wondering if almond flour is what they use for those almond cookies at Chinese restaurants. I LOVE those cookies! I've also never seen guava jelly...thanks for adding the substitutions. KY is not known for their diverse ingredients. The "international" aisle in Meijer is about as close as it gets.
