For some reason or another, a favorite cookie from my childhood popped into my head a couple of days ago. It was a store bought cookie with coconut, chocolate chips, and oatmeal. I loved it! These days I'd rather bake my own, it's much more fun and, of course, there aren't as many strange ingredients to wonder about.
My mom is going to be reading this so I would like to clarify one thing, we did bake plenty of our own cookies as well. Our favorites were Nestle Toll House Chocolate Chip and peanut butter with those cute little fork marks.
I would have loved to use whole wheat pastry flour in these. Unfortunately, I used it all and haven't gone out to pick up more. I will definitely use it the next time, it's much more nutritious.
I did buy the cheapy chips but they really weren't bad at all.
I love the the toasted coconut in these!
My kid's were thrilled when they arrived home from school and discovered these dandy cookies were waiting for them in the kitchen. :)
Toasted Coconut and Chocolate Chip Oatmeal Cookies

makes about 2 dozen

3/4 cup butter, softened
1 egg
1 tsp coconut extract
1 tsp vanilla extract
1 cup packed brown sugar
1 3/4 cups flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp cinnamon
1/2 cup toasted shredded coconut
1 1/2 cups chocolate chips
2 cups rolled oats
In a small bowl whisk together the flour, baking powder, baking soda, cinnamon, and coconut. Beat butter for 30 seconds until creamy. Add the egg, extracts, and sugar. Mix well. Add the flour mixture to the egg mixture and mix well. Fold in the chips and oats.
Place tbsp sized scoops on baking sheet. Press down each scoop just a bit. Bake in a 375 degree oven for 10-12 minutes.
My, oh my, these are disappearing faster than I can say cookie!!

Believe it or not, I don't think I've ever had a coconut & chocolate chip oatmeal cookie! I think I need to make these ASAP! I can totally see how toasted coconut would take these to a whole new amazing level!

These look so thick and delicious. I love the sound of the chocolate and coconut together. And I buy the cheapy chips as well. Sometimes, the cheap chocolate does just as well as teh expensive kind. And I feel like chocolate chip cookies are just that time.
Yum-O!!! Chocolate and coconut are my weaknesses (especially together). I will add the oatmeal just because it's "nutritious"! :-D

And I actually thought about you the other night while we were watching Iron Chef America. The challenger used a lot of "chemical" ingredients (like xantham gum)...suddenly I was rooting for him lose. If you're going to cook, why junk it up with that stuff?? That's WHY I cook. For some reason, I just thought you'd disapprove. :-D

Wow, these are loaded with perfect ingredients & it is not hard to see why they are gone! My cookie making skills may need some dusting off since I let my daughters do the holiday cookies this year. Bravo! Good recipe & post.

Wow, these sound delicious! What kind of rolled oats do you use (quick or regular)? Also, so you use sweetened or unsweetened coconut? Finally, do you use bittersweet chocolate chips or another type of chip? Thanks so much!
Anonymous- Sorry it's taken me so long to get to your questions. I used rolled oats for this recipe and my coconut was the sweetened kind. I also used bittersweet chocolate chips. I'm sure you would get nice results with the quick oats and unsweetened coconut as well. I hope you enjoy these if you make them. Happy Holidays to you. :)
