Mocha muffin bites

I have been craving a warm and delightfully chocolaty Grande Mocha for about a week now. I've been resisting the temptation to drive on thru and hand the barista four bucks for twenty ounces of heaven in a paper cup.

I decided there was a much more economical way to satisfy my cravings.

I baked up a big batch of these yummy mocha muffin bites.

I did a search and found that Joy of Baking had a nice recipe for mocha muffins. Of course, I made quite a few changes, one of which was to add a big dollop of Nutella to the mix. Chocolate Hazelnut Heaven!

Mocha Muffin Bites

makes approximately 30 mini muffins

3 large eggs
1/2 cup milk
1/2 cup non-fat Greek style vanilla yogurt
3/4 cup canola oil
1/2 cup strong black coffee (room temp)
1 tsp vanilla extract
1/4 cup Nutella
2 1/2 cups whole wheat pastry flour
1/4 cup ground golden flax seed
1/3 cup quality cocoa powder
2/3 cup brown sugar
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup white chocolate chips
1/2 cup dark chocolate chips

Spray oil a mini muffin pan. Set aside.

In a large bowl combine the eggs, milk, yogurt, oil, coffee, vanilla, and Nutella. Whisk until smooth. In another large bowl combine the flour, flax, cocoa powder, sugar, baking powder, baking soda, and salt. Whisk well. Add flour mixture to egg mixture and stir just until combined. Fold in chips.

Bake in a 375 degrees for 9-11 minutes. Remove from muffin pan and cool completely. Frost with Nutella if desired.

Trust me, you won't be able to eat just one of these cute little muffins so don't even try to resist. Eat two or three! :D

What a grand idea. And you even have flaxseed! They are beautiful - a definite "must do" for the weekend. It will lift everyone's spiprits from the frigid-winter-blues.

Oh. My. Goodness. Those are freaking fantastic!! I have a *small* addiction to Nutella. Do you think a jar a week is an obsession?? I can't wait to make these next weekend!! I can't make them during the week - it violates all of my rules of healthy eating and miserable breakfast food. But they have Saturday written all over them! Thanks!!

You know, I think I have everything to make these muffins. Including the pantry staple... Nutella. I make paninis with the stuff. Country french bread, Nutella, strawberries, nuts and butter! Smoosh in the panini grill and voila! Breakfast, snack or you know... dinner! Thank you for, yet another, great recipe!

Yup, these are my kind of muffin. I'm hooked on peppermint mochas, but these muffins sound perfect the way they are, especially with the Nutella. Such a good recipe!

A good way to satisfy a craving. Ironically, I had myself a mocha frap this morning, but it was from a gift card that was given to me, so I saved rather than handing them my own 4 bucks.

Mini mocha mufifns are definitely way better than a four dollar starbucks drink. Especially since you added some flax and whole wheat flour to them. This means they are healthy right? And that I can have at least five?

A question about white chocolate chips - does it say "white chips" or "white chocolate chips" on the label? I got some recently that said white chips and I used them in banana muffins along with dark chocolate chips and though the muffins were really good, my white chips completely disappeared! I think these chips that I got are not really white chocolate :)

They look so good, and your chips are more or less still visible. Mine usually went out of shape by the time the muffins are baked.

Can I say NUTELLA? Um, that right there sells me. Ok, but I have to admit, there isn't much that can keep me away from my cup of coffee when that craving hits though...although I'm sure these would be yummy with my coffee!
