It's a pancake party! M.Y.O.S.

Have you ever whipped up a batch of pancakes for your loved ones on a fine Saturday morning only to find that you are clean out of syrup? Well, it's not a good thing! What to do! Run to the market? No Way! Let's make some from scratch!!

I don't have any maple trees in my backyard to tap into so this isn't real maple syrup. It does contain a touch of molasses for richer flavor.

It's a cinch to make and it's a lot easier on the wallet than the real thing.

Homemade Pancake Syrup
by theUngourmet

Print recipe

makes approx. 4 1/2 pints

2 tbsp butter
2 cups water
1 cup sugar
1/4 tsp salt
2 cups corn syrup
3-4 tbsp molasses
2 tsp maple extract

Place the water, sugar, and salt into a 4 qt saucepan. Heat on medium until sugar is dissolved. Add the butter, corn syrup, and molasses. Turn up heat and bring to a boil, stirring occasionally. Boil for 8-10 minutes. Remove from heat and allow to cool for at least 15 minutes. Add the maple extract and allow to cool completely.

If you are using this right away you can serve it warm.

Store any remaining syrup in the refrigerator.

Hope your week is shaping up nicely! ;0)

C says that is the kind of syrup he always had on the farm but it was always a treat to have black strap molasses. We have been having blueberry pancakes lately. This syrup would be delightful. I am about out of what I have so maybe I will try some of yours. Good job!

I did not know that it had molasses in it. Wow! I was wondering what you were doing with molasses earlier today!

Yummy!

I have been lucky to not run out of maple syrup - but only because my family makes it! This looks and sounds like a good substitue though if it were to happen!

Wow, what a fantastic idea! Syrup is one of those things that I put in the category of "things I can never make ever" but obviously that is not true. Sounds delicious.

Do you secretly live in my basement? Because the syrup debacle happens regularly in my house. I'm not as resourceful as you, however. I just hand my kids a jar of strawberry jam and say, "deal with it!" :)

With the addition of molasses this syrup would taste pretty close to the real thing..nothing beats syrup on my pancakes.

We *almost* ran out of syrup the other day - wish I'd had your recipe! Mama wouldn't have had such dry pancakes! ;-)

You are ALL over the molasses this week! My sweet tooth is very thankful. I rarely run out of pancake syrup, but after slaving over the bowl, making chocolate chip waffles from scratch, it seems like sacrilege to dump a bunch of store-bought Aunt Jemima on them. I'm glad to have a homemade version. We try to take it down to the most basic ingredients in this house and now I have a recipe for the syrup, too! Yay! Neal will be pleased.

Well, thank God you keep posting recipes that use molasses. I've bought a jar to make some cookies in December and I really want to get rid of all the rest because no matter how well I wipe it the stupid thing leave a trail of sticky goo behind...

This is so good to know! I may just stop buying my syrup at the store now that I have a recipe. It looks wonderful on those pancakes!

Isn't it crazy what syrup costs? This is a much better option.

My friend actually prefers this kind of syrup - she grew up with it and actually doesn't like the texture of store-bought.

This is a really good idea! We don't usually keep syrup around like we did when my kids were still at home, so this will really come in handy when my husband and I get a craving for midnight pancakes! Thanks for sharing.
