Easy creamy tomato basil soup

I was inspired to cook up my very first batch of (semi homemade) creamy tomato basil soup after doing a bit of snooping around over at Big Black Dog. If you haven't been over there you really should go and take a peek. There are some fantastic soup recipes over there. It made me wish for a soup loving husband! :) Big Black Dog is actually packed with tons of yummy stuff. Everything from breads, to meats, to seafood, to desserts, and everything in between.

I didn't have all of the ingredients for any of the soups over there so I poked around in my kitchen and came up with just enough stuff to put this soup together. I got the idea for the bacon from over there too. I love it!

Easy Creamy Tomato Basil Soup
by theUngourmet

1 tbsp extra virgin olive oil
1 clove minced garlic
1 12 oz can of crushed tomatoes
1 cup vegetable broth
1 tsp dried basil
1 cup cream
1/2 cup grated parmesan
cracked pepper
cooked crumbled turkey bacon

Heat oil in a 4 qt sauce pan over medium heat. Add garlic and cook for about 1 minute. Add the tomatoes, basil, and a bit of cracked pepper. Simmer for 5-10 minutes.

In a small saucepan, heat the cream on medium low until warm but not boiling. Slowly stir cream into tomatoes. Simmer for a couple more minutes. Remove from heat. Stir in parmesan cheese.

Pour soup into a blender and blend until smooth and creamy. Be careful not to over fill your blender and burn yourself!!

Garnish with crumbled bacon and cracked pepper (if desired).

I asked my husband how he liked this soup and if he thought it was missing anything. He glanced up in between bites, paused, and then said, "Meat". Brat!

I personally think it could have used a nice pat or two of BUTTER, but that's just me.

I love turkey bacon in here. I have had a similar recipe at a local restaurant and I am sure they add a splash of vodka:D

Mmmmm...bacon. That sounds like the perfect touch to tomato soup. You wouldn't happen to have a chicken soup recipe buried in here somewhere, would you?

Yummy! I love that you added the part about not over-filling your blender!! The first time I made tomato soup I put it in my food processor (and yes, I overfilled it) and burned the bejeebers out of myself...

Now I just need some grilled cheese :)

Oh I am so with you on wishing I had a soup loving husband! There are 2 requirements for him to want (or eat) soup. He says it has to be very cold and he has to be sick!!! I mean really, those 2 things don't happen together (for which I am thankful) but who doesn't love a good pot of soup! I think they were just raised wrong/ha
I love tomato basil soup..the progresso one is actually very good although I am sure this one is much better.....can't beat homemade.
And the meat comment....priceless, I've heard that one also! Men!!!

Also, I have discovered that an immersion blender is a lot less stressful than pouring it into the blender--just a handy little tip if you have one!

Now I want tomato soup...thankfully I have a teeny bit left in the fridge!

We do love soup and I serve it often for dinner. Sometimes a good soup is all that is needed.

And bacon...well it just makes everything a little bit better!

Oh baby, my bacon baby, come to mama! This soup looks great! I did get burned out when a chain 'Le Madeline' out of Dallas made tomato basil so popular, and we ate it so MUCH! Now you have inspired me to try it again...

I agree with Sam (MCK), it is hard to get a good photo of soup, and believe me I make enough, great job!

Kim, this sounds good. I have never tried tomato basil soup. I have to confess... oops! I have only had that good ol' Campbells Tomato. I just might have to get adventurous and try this one.

Yes!!! tomato soup is the best. All that's missing a nice grilled cheese to go with it. Yummmmmmm! I love the addition of the bacon topping. I think I shall make a soup tonight too.

Ok, honestly having had Campbells tomato soup, I don't LIKE tomato soup. But you have to crumble bacon on top, don't you? Now I really want some creamy tomato soup...with grilled cheese sandwich for dipping!
