Chocolate orange cardamom muffins with honey citrus glaze

After careful consideration I decided to go with a muffin instead of a cupcake. Actually, it was because the only cupcake liners I have left are for Halloween and Christmas and that would just never do!!

I'm really glad I discovered cardamom. I'm having fun trying to think of ways to use it in my baking.

This time I thought I'd try it with chocolate and orange. It was pretty darn good!

I topped the muffins off with a honey citrus glaze. I also tried out Trader Joe's organic powdered sugar made from pure cane juice. I has a nice golden honey color to it.

Chocolate Orange Cardamon Muffins with Honey Citrus Glaze

makes about 14 muffins

3 large eggs
1/2 cup orange juice
1 tbsp orange zest
1/2 cup Greek style plain yogurt
3/4 cup canola oil
1 1/2 tsp vanilla
2 1/4 cups all purpose flour
1/4 cup ground golden flax seed
1/2 cup cocoa powder
3/4 cup packed brown sugar
1/2 tsp ground cardamom
1 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt


Spray oil muffin pan. Set aside.

In a large bowl combine the eggs, orange juice, zest, yogurt, oil, and vanilla. Whisk until combined.

In another bowl combine the flour, flax, cocoa, sugar, cardamom, baking powder, baking soda, and salt. Whisk until combined.

Add the flour mixture to the egg mixture and stir just until combined.

Fill muffins cups almost full. Bake at 375 degrees for 16-18 minutes. Cool completely before adding glaze.

Honey Citrus Glaze

1 cup powdered sugar
1 tbsp honey
1 tbsp orange juice
1 tsp vanilla
1-2 tsp orange zest

Combine ingredients. You may have to play around with the orange juice and sugar until you achieve a honey-like consistency.

Spread glaze on top of each muffin.

Try not to eat too many in one sitting!!

I will say that I would like to taste a richer chocolate flavor in these so I may use baking chocolate the next time. They were moist and not overly sweet. The glaze really added a nice pop of honey citrus flavor to the muffins.

Your pictures are fantastic -- I wish they were edible! ;) I've never had cardamom paired with citrus, but I bet it tastes wonderful. That glaze is totally enticing!

Yum yum yum. Cardamom in baked goods is just fantastic. I also love it in Indian rice. The glaze is to die for! I could lick it all up. And go back for seconds. Love the citrus fruit too!
