whole wheat and spice pancake squares

We love to eat pancakes on the weekends over at my humble abode. I love finding fun new ways to jazz up a basic pancake recipe so when I spotted pancakes squares over at Donna's blog I couldn't wait to give them a whirl. Donna found the recipe over at the Big Red Kitchen.

As I was preparing to whip these up I discovered that I was out of AP flour. Instead of running off to the market I decided to go with my Bob's Red Mill stone ground whole wheat flour. While I was at it, I threw in a few spices just for fun.

When they were finished baking I topped them off with Katy's amazing blueberry sauce. I am so addicted to this sauce!

Whole Wheat and Spice Pancake Squares

1 1/2 cups milk
4 tbsp melted butter
2 large eggs
2 tbsp sugar
2 cups stone ground whole wheat flour (I think next time I'll use 1/2 AP in this)
4 tsp baking powder
1 1/2 tsp pumpkin pie spice
1/2 tsp salt

Print Recipe

Preheat oven to 350 degrees. Lightly grease a 9x11 baking dish. In a large mixing bowl beat together the milk, butter and eggs. Stir in the sugar. Sift together the flour, baking powder, spice and salt. Gradually add to the wet ingredients, stirring. Pour batter into prepared pan and bake for 20-25 minutes.

Serve with Katy's most excellent blueberry sauce and/or maple syrup and lots of yummy butter.

After seeing Julie and Julia recently, I am all the more a fan of real, honest to goodness butter! Can you believe Julia Childs ate lots of rich buttery foods, drank, and smoked and still lived to the age of 91?! Amazing! She knew how to live her life and not sit around worrying. What a woman! (Oh BTW, I am not suggesting we all become a bunch of butter chugging, chain smoking, alcoholics! ;D)

These look so awesome. I wonder if my kids, who are pancake purest meaning that they only will eat the instant kind, will like these. I think I am going to try.

Ha you had me laughing at that last part, since my family lives to be 99, and did eat rather fatty, but did drink, so if I throw in the wine will I keep going past that :)

You know I love the kids in the kitchen thing, so go girls with your wonderful pancakes!!!

Yummy! I saw the pancake squares on Donna's blog and then blueberry sauce on Katy's blog and drooled over both...I'm so glad that you thought to put them together and make this recipe your own with the whole wheat flour and spices. This looks like the perfect breakfast to me! BTW, love the pics of the little bakers. : )

I love how these look kind of like cornbread-style pancakes. Perfect with all the spices.

My grandparents ate whatever they wanted their whole lives and are still alive and kicking. And they are in their nineties. My mother swears that all of the escarole they ate outweighed all of the cannolis.

I have got to try those square pancakes; we eat a lot pancakes at least a couple times a month here so we're looking for new ways.

Thanks for the shout out. I love that blueberry sauce as well; I don't even bother trying out anything new as that one is such a huge fav with me. Too many other foods that I want to find "the one" for.

Pancake SQUARES? Oh ho ho I like. Because otherwise the chef is standing there making a stack of pancakes to use up all the batter while everyone else is eating and chatting.

We have pancakes or waffles every Sunday and while my husband would never turn down my chocolate chip-black walnut waffles, I think he is ready for something different. So I'm going to give him these!

What a great idea - the Cupcake Academy. I would like to apply for admission into the Pie Academy!

What a GREAT idea! I'm hitting myself over the head...of course! When there's a crowd, why not bake pancakes in a pan? This is one of those d'oh! moments!
