E is for Cookie

I know what you're thinking. You're thinking, "Oh my gosh, those are so perfect! Did Martha make those?". Well, thanks so much! Actually, my kids and I made them!

We were racing to get these made so that we could be a part of The Apron Goddesses Cookie Exchange!

I jazzed up my basic sugar cookie recipe with a bit of Eggnog!

These are so fabulous! They really don't even need frosting, but since it's the time of year to fancy things up...

Eggnog Snowflake Cookies
by theUngourmet

3 cups all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1 cup sugar
1 cup softened butter
1 egg, lightly beaten
3 tbsp eggnog
1/2 tsp rum extract
1/2 tsp vanilla extract

Sift together the flour, baking powder, salt, nutmeg and sugar. Cut in butter until mixture is crumbly. Stir in the beaten egg, rum extract, vanilla extract, and eggnog. Mix well. Chill for several hours or overnight.

Use powdered sugar to "flour" the area you will be rolling your dough on. Roll out dough to 1/4 thickness. Cut into shapes. Place on a cookie sheet and bake at 350 degrees for 10-12 minutes until lightly browned. Allow to cool before frosting.

These cookies are wonderful just as they are but if you want to fancy them up with a little frosting try this Eggnog Frosting Recipe.

Eggnog frosting
by theUngourmet

3 cups powdered sugar
1/2 cup softened butter
1 tsp vanilla
1 tsp rum extract
1-2 tbsp eggnog

Combine butter, vanilla, rum extract, and eggnog, blend well. Add the powdered sugar 1/2 cup at a time until desired consistency is reached.

Frost away!!

I was suppose to make cookies with my clients son, but since my stove is topsy turvy right now, I hopefully am making some today, and I feel like if I could virtually reach in there I would have the icing everywhere, evidence I had the whole batch...icing smiles to you!

The newspaper I work for has asked me to share my cookie recipes for a cookie countdown and it turns out I have almost none. I wish I were you and had brilliant ideas on how to make cookies with eggnog!!!

It's alwasy great to bake with kids in the kitchen. It's a good way to spend time with them. The only reason I like sugar cookies is because of the frosting. I'm interested in the addition of the eggnog. I'm not much of a fan of the stuff, but I'd give these a try.

Well anything with eggnog AND rum (or rum extract, whatever) MUST be good! I have never been very crafty with the frosting of things like cakes, cupcakes, cookies...I prefer just to eat it right out of the container. But you make these look so delish, I may have to give it a try. So, tell me...where does one buy the little pearly things??
