Those muffins combine my favorite things so I guess I can't go wrong with those and that penne recipe looks amazing!! I'm more likely to have chicken around here, too, than prociutto (sp?). PS--I used to live on Whidbey Island, WA and I have tons of relatives in Portland, OR area.
