The day the muffins sank

Has this ever happened to anyone else? It has happened to me a few times now. What am I doing wrong? I'm not over stirring....it's just weird. The muffins appear to be done but when I pull them out of the oven, they sink in the middle. ARGH! So aggravating!

These were quite delicious but they do look a bit deflated. If any of you bakers out there have a tip, I'd love to hear it!

Butternut Spice Muffins with Raisins and White Chocolate Chips
by the Ungourmet

1 cup whole wheat flour
1/3 cup Strober Farms Golden Flax Seed
2 tsp baking powder
1/2 cup sugar
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 1/4 cups butternut squash puree
1 tsp fresh minced ginger
1/2 cup non fat yogurt
1/2 cup oil
1 large egg
1 1/2 tsp vanilla
1/2 cup raisins
1/2 cup white chocolate chips

Topping

2 tbsp sugar
1 tsp cinnamon

Sift the flour, flax, baking powder, cinnamon, nutmeg and salt. Set aside. In a separate bowl combine the squash, ginger, yogurt, oil, egg, and vanilla. Stir in the dry ingredients just until blended. Fold in raisins and chips. Sprinkle with sugar and cinnamon mixture.

Bake at 375 degrees for 20-25 minutes.

These are beyond moist! My family said they were yummy enough to put on the blog so here they are. I will try them again and see if I can keep them from sinking. Maybe I'll leave out the yogurt. Hmmm.

Hmm...interesting. I'm not sure what went wrong. That's an odd thing to happen, but delicious looking either way.

I am the last person to know for sure... but

too much air in the mixer, are you whipping too much? Do you use a kitchenaid mixer and leave it running too long?

I say this from experience, not with muffins, but other items... i used to just let it run for 10 minutes or so while I was prepping other things.

My guess, but again, I would wait for a real cook to reply

That happens to me all the time. I thought that was how all muffins looked!

That's happened to me a couple of times, and usually it's because air gets trapped inside when you scoop the batter in the cups. Try gently dropping the pan on the counter to chase out the air bubbles. Regardless of how they looked, I'm sure they were tasty!

Are you letting them cool in the pan for about 10 minutes before removing them to a rack? Sometimes they will sink if they cool too quickly (ie: removing them right away from the hot pan)...

Overmixing will do this too. Muffins need gentle mixing.

oh bless but in a happy way i am pleased that once your baking wasn't perfect it happens to me all the time and always want to throw in the towel with baking.
But I will keep trying!

It does happen to me sometimes and I have no idea why. Other times I make the same recipe and they turn out just perfect.

One of those things I guess.

Well, at least they tasted good! My muffins do that too, but I always blame it on the altitude. I'm interested to see what others say...

It happened to me two days ago and then I realized I forgot to put the usual 1/2 teaspoon baking powder and 1/2 teaspoon baking soda. Maybe it's that?

Wow, don't know what's going on here. Do you have an oven thermometer to check the temp? Are you using convection cooking? Too much liquid? Whatever is happening...they look darn good to me.

since baking is not my forte at all, i don't have any tips, but i will say that those are some dang good looking mufins! good luck, let us know if you discover any tricks!

This has happened to me before with pumpkin bread...I used a silicone baking loaf pan, so I think that was my problem...either that or my baking powder was stale (which is weird becuase I just replaced it last month). Anyway, I bet your muffins still tasted great!

So I have no idea why they fell. But I just wanted to say that they sound absolutely amazing! Butternut AND white chocolate chips. i think I just died and went to heaven. I try not to make any sudden movements in the kitchen while my muffins/cupcakes are baking. Sometimes that makes them fall (like souffles).

they still look amazing! i haven't ever had that problem, but then i have used the SAME recipe for a gazillion years - a famous kiwi female home cooker -it's pretty basic - maybe i should post it sometime!

I think tapping the filled muffin tin on the counter is the best suggestion...but they still look tasty - and is that a cool new header that I only noticed now?

Sounds like a delicious mix of flavors! Sorry, I don't have any answers about the sinking, but I'm guessing it might be moisture content.

Let me say they looks as delicious as ever and I would not say no. I wonder when this happens to me - did I overmix? Did I zoom it out of the oven too fast? It's a mystery. Like theatre. How these things all come together.

Yeah it's tough when you get that sinking feeling. Maybe they cooled down too fast? I dunno, I'm a doctor not a physicist :)

Still taste fantastic though I bet!

I love the new look of your blog and your muffins look delicious. Try tapping the pans before you put them in the oven and make sure your oven is at the correct temperature. Don't open the door to peek.

First let me say I LOVE your new look to your blog!

Second..flubs happen all the time in the kitchen. Usually its not incorporating the ingredients enough or your baking soda or baking powder is old.

Also peeking inside to look too soon will do that. And not tapping the pans when you put the batter in might if its a light batter.

Sorry about the book.

I cannot tell you...but sometimes my muffins do not grow that much, but haven't seen them sank...yet ;-)

Hmm...maybe you should have used baking soda as well? Or did you beat it too much?

I don't make muffins that much. my muffin experience is my own muffin top and I wish THAT would deflate LOL. Sunk or not, they looks and sound wonderful

Hmm... it could be overmixing or it could just be that whole wheat flour is so heavy... maybe subbing in a little white flour would help. At any rate they still look really tasty.

I just made muffins last night - a double batch so I used two different pans. One pan was silver colored and the other was dark. Tha muffins in the silver pan sank in the middle. The ones in the dark pan look great... maybe it's your pan? I'm throwing the light one out and buying another dark one!
