Tea (cupcakes) for two

There is a new Iron Cupcake Challenge going on right now. The theme is Music and the challenge is to create a cupcake around a song of your choosing. Well, I knew in an instant what I wanted to do!

My cupcake makes good use of Chai Tea and the song that inspired me to make this cupcake is Tea for Two. Tea for Two is a song from the 1925 musical No, No, Nanette which ran on Broadway for 321 executive performances.

Banana Hazelnut Chai Tea Cupcakes

1 cup milk
3 Double Spice Chai Tea bags
2 1/4 cups all purpose flour
3 tsp baking powder
1 tsp salt
1 cup sugar
1/2 cup softened butter
1 tsp vanilla
3 large eggs
2 large very ripe bananas, mashed
1/3 cup chopped hazelnuts

Bring the milk almost to boiling. Add the tea bags and steep for about 7-8 minutes. Remove tea bags and squeeze out as much liquid as possible. Set aside to cool.

Sift the flour, baking powder, salt, and sugar into a large mixing bowl. Add the butter, eggs, vanilla, bananas, hazelnuts, and Chai tea/milk.

Mix on medium speed for 3 minutes.

Fill cupcake liners 2/3 - 3/4 full and bake in a 350 degree oven for 18-20 minutes or until toothpick comes out clean. I made some minis too and they were done in about 12-14 minutes. Cool completely before frosting.

Makes about 20 cupcakes

Honey and Cinnamon Buttercream Frosting
3 cups powdered sugar
1 1/2 tsp cinnamon
1 tsp honey
1/3 cup butter, softened
1 tsp vanilla
2-3 tbsp milk

Combine the butter, cinnamon, honey, vanilla, and 1 tbsp of milk. Gradually add in the powdered sugar. Add more milk a tsp at a time until desired consistency is reached.

I found these super cute autumn leaf sprinkles to put on top. Aren't they sweet!

omg! YUM! (and I love that old song...now it's stuck in my head LOL). so which is better, the cupcake or the icing? Usually one is better than the other but I have a feeling in this case, its a draw.

Used to sing Tea for Two to my girls when they were babies and get great belly laughs...then they realized my singing was atrocious.

Chai is a warm spicy flavor that I wager goes very well in these cupcakes. With that delectable frosting, I imagine these little bites are just heavenly! Will save to my stash of must-make recipes. YUMM
