sweet potato and apple muffins

1 1/2 cups whole wheat flour
2 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp salt
1/2 cup packed brown sugar
1 cup mashed sweet potato
2 eggs, lightly beaten
2 tbsp honey
1/2 cup oil
1/3 cup low fat buttermilk
1 cup peeled, cored, and chopped honeycrisp apple

cinnamon and sugar mix
chopped hazelnuts

In a large bowl combine the flour, baking powder, baking soda, salt, cinnamon, cloves, and brown sugar. Add the sweet potato, eggs, honey, oil, and buttermilk. Stir just until combined. Fold in the apple.

Scoop batter into paper lined muffins cups to nearly full. Top with cinnamon and sugar mixture and chopped hazelnuts.

Place into a 350 degree oven for 16-18 minutes until toothpick inserted comes out clean.

I don't believe these could be any more moist or delicious. A perfect snack for a lovely, crisp autumn day.

Makes about 12-14 muffins

aren't those honeycrisp apples wonderful? I used some today for a galette. Sweet potato muffin...I don't think I've heard of that before but it sounds great with all those spices in there....and the honeycrisp :)

Loved your poem and this muffin looks wonderful! I love sweet potatoes and muffins and I haven't yet tried them all wrapped into one happy lil' baked good...but I might now. This would be a perfect way to use up leftover Thanksgiving sweet potatoes.
