I yam in the mood for a muffin

Baking muffins makes me feel all warm and happy inside! Is that weird? Don't answer that.

Cupcakes are really fun to make but, truth be told, I prefer muffins. They have so much more going for them, nutritionally speaking.

I thought about making pumpkin muffins but didn't have any pumpkin on hand. My son is sick so I didn't want to go out to the store for anything. I grabbed a yam out of the fridge and used it instead.

Don't you just love the color of yams? I sure do!

Molasses Yam Date Muffins
by theUngourmet

1 1/2 cups whole wheat flour
2 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp salt
1/2 cup packed brown sugar
1 cup mashed yams
2 eggs, lightly beaten
1/2 cup molasses
1 tsp minced ginger
1 tsp vanilla
1/2 cup oil
1/3 cup half and half
1/3 cup chopped dates

Combine the yams, eggs, molasses, ginger, vanilla, oil, and half and half in a large bowl. Stir in the dry ingredients just until combined. Don't over stir. Fold in the dates.

Divide evenly into muffin cups. I was able to make 14 muffins out of this recipe. Bake in a 375 oven for 16-18 minutes or until toothpick comes out clean.

These are the taste of autumn all wrapped up in a muffin. They are spicy, moist, and totally fabulous! Don't fear the yam! Just make these ASAP! You'll love 'em!

Although I am never sure of the difference (or if there really is one) between sweet potatoes and yams, we love sweet potatoes. These do sound good and they (SP or yams) are so good for you!

Molasses and dates that's an unexpected twist. Yummy!

I've been craving yams sliced in wedges and sprinkled with sea salt and rosemary and roasted in the oven. I know most people like them sweet but I prefer them savory. :)

Those muffins sound incredible. I am with you, I prefer muffins over cupcakes. What is wrong with us?? I just asked my husband if I should make cupcakes or muffins tomorrow and he said cupcakes with a inch of icing!!

yuuuuuuum! i think you used sweet potatoes though, a real yam is actually white. people always get them confused because grocery stores name them incorrectly.

Thanks for your comment, Kim! I have tried Quaker oats but they are processed in a facility which also processes wheat. I suspect there was some cross-contamination as I didn't feel so good after eating them.

Yams are beautiful nutritional powerhouses. I haven't ever used them in muffins but I'm not sure why not. I will now. Meanwhile I do have a pumpkin muffin waiting in the kitchen....:-) I love fall!
