easy and oh-so-cute mini apple pies

Do you ever find yourself getting almost giddy over a recipe you've put together? I was like this today. I was like a kid on Christmas morning. Okay, I might be going a bit overboard but I was really quite pleased with the way these little pies came together.

I bought these rounds wraps at the store the other day and I wanted to find something fun to do with them. I thought of several different combinations of ingredients from sweet to savory. I finally thought I had it all worked out in my brain to make apple turnovers...I changed my mind at the last moment and thought that mini apple pies would be more unique and fun.

The first step is to place 12 wraps into a lightly oiled muffin pan.

Add the apple filling. Bake for 12 minutes at 375 degrees.

Add a bit of oat topping. Bake for 10 more minutes. Covering with foil if wraps are getting too brown.

Mini Apple Pies
by the unGourmet

12 round wraps (dumpling wrappers)
2 large apples, peeled, cored and chopped (I used golden delicious)
1/4 cup raisins
2 tbsp spiced apple cider
1 tbsp brown sugar
2 tsp honey
2 tsp flour
1/2 tsp cinnamon
pinch of nutmeg
dash of salt

Topping

3/4 cup oats
1 tbsp brown sugar
1/2 tsp cinnamon
2 tbsp cold butter

Place the oats, brown sugar, and cinnamon into a food processor. Pulse to combine. Add the butter and pulse to combine. Place into a bowl and mix a bit more with fingers until you have course crumbs.

Serve these adorable pies with a small scoop of vanilla ice cream or frozen yogurt and a drizzle of caramel sauce.

I have never had a dinner party in my life but if I ever did I would serve these. They are lovely and bring smiles. I hope you will give them a try!

What a great use for dumpling wrappers! I tend to steer clear of pies because I'm not so great at crust, but that completely eliminates that problem!

These are great, awesome idea to use the wrappers to make the mini apple pies! I've actually done something similar recently, more in a tart style - fried the open dumpling wrappers and put apples on top (cooked quickly in a pan with sugar & spices).

I have TWO packs of those in my freezer!! I have apples in a basket!! THANK YOU!! Those mini apple pies make great little treats to share with your neighbors!! They look unique and really delicious. To me, vanilla ice cream is always a wonderful addition and I love your photos!!

Whoa what a great idea! I love how these are portion sized so that you can have the scoop of ice cream along with it and still feel satisfied without completely overindulging. Although I bet it's hard to just stop at one mini pie. Awesome idea! You are a genius.
